Green Coconut Bowl

Prep: 10 minutes

Yield: 1 serving

1⁄4 cup unsweetened coconut milk (or milk of your choice)

1⁄2  frozen banana, cut into pieces if necessary

1⁄3 cup frozen chopped mango

1 cup trimmed kale leaves

2 tbsp  unsweetened shredded or flaked coconut

Ice cubes (optional)

Suggested Toppings

Sliced banana

Blueberries

Raspberries

Unsweetened shredded or flaked coconut

Chia seeds

  1. In blender, combine coconut milk, banana, mango, kale and coconut. Secure lid and blend (from low to high if using a variable-speed blender) until smooth. If a thicker consistency is desired, add ice, one cube at a time, and blend until smooth.
  2. Pour into a bowl and top with any of the suggested toppings, as desired.

Watermelon and Kale are two superfoods that (believe it or not) my three kids love! Last week we went out walking in our fun Alabama 97 degree heat, and I made this Watermelon Kale Smoothie topped with chia seeds and fresh watermelon and OMG it was so good! I know, I know. It looks weird at first. Trust me on this one. You just have to try it! For 152 calories and 3.6 grams of protein, this recipe also is very high in vitamin C and manganese as well as potassium, Vitamin A and B6! For health benefits of watermelon click here. Green Pistachio Smoothie

I have something healthy for St. Patrick’s day morning. How about a delicious and nutritious Green Pistachio Smoothie that will nourish and energize you in preparation for the fun-filled day? Combine fresh spinach or kale, banana, and almond milk in a blender; top it off with Pistachio Chewy Bites (one of my kid’s favorite healthy snacks).  Pistachio Chewy Bites are heart-healthy, 100% all natural, gluten and dairy free, low in sodium. Honeydew Cucumber Green Smoothie

If you like green smoothies, you love this one! Last weekend, I had the amazing opportunity to visit Barnsley Resort in Georgia. I recommend it for so many reasons! Enter the 19th-century Downing-style village that features cottages with porch swings or rocking chairs, amazing golf course, hiking, canoeing, horseback riding, clay shooting, pool, spa tennis, and so much more. Be spoiled by supreme Southern service, incredible farm-to-table dining, breathtaking grounds and something unexpected at every turn. Barnsley’s new Chef, Adam Hayes, is one you’ll definitely want to keep your eye own. His palate and passion is contagious (and he’s a cutie too). I had this Honeydew Cucumber Smoothie one morning for breakfast, and it was fabulous! I didn’t get the recipe, but I know it had honeydew, cucumber, and spinach. SO here’s my variation. Feel free to add whey protein powder if you like! Enjoy and happy July 4th week!

Spinach Mango Protein Shooters

My 3 kids and I have been really into smoothies lately, and yes, they honestly do drink “green” variations. I made these Spinach Mango Protein Shooters for breakfast, and they were quite the hit!  I ended up making this again after a tough “Insanity” workout yesterday, and it was an amazing pick-me-up. It’s perfect filled with spinach, mango and a protein boost from Greek yogurt. I love using frozen mango and don’t forget: Frozen fruits and vegetables are just as healthy as fresh. They are actually picked at their peak and flash-frozen (see more on this at Easy Home Meals). I used my newest kitchen equipment addition for this recipe: The Nutribullet, which makes it so easy to make a smoothie for one (or for small amounts). Enjoy!

Spinach Pineapple Smoothie

I love green smoothies! Last week after I worked out at Lifetime Fitness, I noticed that the drink of the day was a “Spinach Pineapple Smoothie”. Their version had pineapple, pineapple juice, spinach and ice. I tweeted about it, and so many people responded that it sounded so good. I went straight home to create my own version of Spinach Pineapple Smoothie to share with you so you would have measurements. This smoothie tasted great, and even my kids loved it. Try it with kale too. It’s fabulous!
