Skillet Blueberry Cobbler

Blueberries are at their peak season right now with most grocery stores selling them buy one get one free. I made this Skillet Blueberry Crisp on Sunday night, which only takes 10 minutes of preparation time. It’s so easy, healthy and tastes fantastic! My husband said this blueberry crisp was so good that it did not even need vanilla ice cream (or frozen yogurt to top it off). If you have some on hand and want that cold and warm temperature combination, feel free to add it. I used my 61/2-inch cast-iron skillet, but if you only have the larger one, you can double the recipe. Blueberries are also healthy for you. In only 80 calories per cup and virtually no fat, blueberries offer many nutritional benefits. They are packed with Vitamin C and are a good source of manganese (which is important in bone health). Blueberries have antioxidants that can improve vision and promote quicker adjustment of the eyes to darkness. They can also improve memory and reduce the risk of infections. They have high levels of compounds that help widen arteries and can help blood flow. Blueberries are also a good source of fiber, and they have phytonutrients that protect cells from damage. This recipe is great to serve to kick off summer, and it will be awesome to serve on Memorial Day and Fathers’s Day too!

Passover is only a few weeks ahead, and I know many of my readers are always looking for more Passover desserts to diversify their holiday cooking. This Passover Brownie A La Mode is really awesome to serve during the week of Passover. The Passover Brownie mixture is made with nonfat Greek yogurt which adds nice moistness to the texture and protein in the brownies. Serve on the brownie on their own with a glass of milk or with frozen yogurt or any nondairy whipped topping. 4 Ingredient Passover Bars

4 Ingredient Passover Bars

 

I know I am flipping from Passover recipes to Easter recipes this week but with these two holidays this weekend, what can I do since I am celebrating both! I made these 4 Ingredient Passover Bars today and had to post them because they are great for anytime, anywhere and are gluten-free! You can use pecans, almonds or walnuts and your favorite type of chocolate chips. Don’t add any water to the batter; just mix well and pat down in the pan. I recommend using parchment paper for easy removal and slicing. Happy Passover and if you’re not celebrating, but looking for a flourless, gluten-free, grain free and dairy free recipe, here you go!

No-Bake Date Nut Energy Bars

I am always looking for new, healthy snack ideas for the kids, and if I can come up with a no-bake recipe idea, then even better. My two boys love dried dates, so I thought this combination of dates, nuts and flaxseed would make a great healthy snack, dessert or breakfast idea. You’ll love these too. No-Bake Date Energy Bars are not only “no-bake”, they are also gluten-free and perfect for all of my friends following the Paleo Diet. They also make a great pre or post workout snack so enjoy!

No-Bake Mini Healthy Bites: Gluten-Free and Passover

I love to experiment with “No-Bake” cookie recipes, especially those that are gluten-free, Paleo Diet or perfect for Passover which starts this week. I was excited to make this recipe for No-Bake Mini Energy Bites which I made and tweaked from a recipe I saw on the blog, “Gimme some Oven”.  Her recipe is great, but if you want a Passover or gluten-free version, try grinding your favorite nuts and omitting the oatmeal. These are incredible, and I honestly could not keep my hands out of the container. My 3 kids had absolutely no idea there was flaxseed in them. Feel free to use almond butter instead of peanut butter and any of your favorite nuts.

Flourless Chocolate Torte: Gluten-Free and Wonderful for Passover and Easter

I have made this Flourless Chocolate Torte for several years for my wonderful family for Passover. It’s been a treasured recipe that I haven’t shared. When I got a note from my friend, Robin, saying that her son’s birthday falls on Passover this year, I knew I had to give her the recipe. So here it is…..You can substitute bittersweet chocolate for semisweet or mix the two. It is really easy to prepare and only a few ingredients. Just take your time and follow the directions very carefully. I was in a hurry and unhooked my springform pan too soon (trying to make it to my son’s baseball game) and it came out looking like a chocolate souffle as seen above. Still wonderful and sinfully rich.

I am a huge fan of Greek yogurt (Fage 0% is my favorite) as you may have noticed throught my blog. Greek yogurt has 20 grams of protein per 8-ounces, 0 grams of fat and only 9 carbohydrates.

I have had lots of requests for spring recipe ideas, Gluten-Free, Passover and Easter recipes, and I thought Greek Yogurt Berry Parfaits fit in perfectly. These are so easy and only 6 ingredients. You can make them at the last minute or ahead of time. Feel free to substitute strawberries or blackberries.
