Okay this is the best gluten free cookie recipe I have made in a while! When you read the ingredient list, you may think to yourself (huh?). I promise these Amazing Gluten Free Chocolate Chip Cookies are amazingly good! I was hesitant too, and you should have seen my kids face when I told them what was in them! When they and I tried these, they were hooked. My son, Zachary, ate 5 the first night and my daughter, Leigh had 3 (and they have been begging me to make them again). Gluten Free Double Chocolate Chip Cookies
Lately, I have been on the hunt for a gluten-free cookie mix that is all natural with no preservatives. And most importantly…one that tastes good. Guess what? I found one. Simple Mills is all-natural almond flour based baking mixes that are naturally gluten-free and paleo friendly. The beauty of the mixes is that they only contain real ingredients, such as baking soda and coconut sugar so they’re not filled with preservatives like other mixes.

A friend recently passed me this recipe for Flourless Chocolate Cookies, and she told me to try them. I am always willing to try any new flourless or gluten free recipe, especially when it comes to dessert. She was absolutely correct when she said they were simple as can be. If you’re on a gluten-free diet or trying to watch your flour intake, these are perfect for you. Feel free to double the recipe because they go really fast. Just be sure to store them in a cool, dry place. These cookies would also be wonderful served on Passover so stash this one away for next spring.
No-Bake Nutella Oatmeal Cookies
I made these No-Bake Nutella Oatmeal Cookies a few weeks ago, and they were too good to be true. Not only are they a “No-Bake” cookie recipe, but they are filled with my favorite ingredients: Nutella, peanut or almond butter, dark cocoa powder, oats and almond milk. These are an ideal afternoon gluten-free snack or dessert. I think I definitely need to make a batch for Mother’s Day.

These No-Bake Paleo Cookies were introduced to me by my friend, Tanya, who has been having success with the Paleo Diet. What I love about these cookies is that they are gluten free, high in omega 3 fatty acids, and best of all, taste great. This recipe is great if you’re on a gluten-free diet, trying to eat low carbohydrates or following the the Paleo Diet, which is based around eating quality sources of protein, fresh fruits, vegetables, lean meats, seafoods, fats high in omega-3 and low-glycemic carbohydrates.
