Every Halloween my daughter, Leigh, loves to have friends over to decorate cupcakes for Halloween. I purchase an array of baking supplies, and she and her friends scan the internet for inspiration. They always ask me what blogs are some of my favorites so I do have some influence with some of their selections. This is not one of my typical “lightened-up” recipes, but I had to share these Any Occasion Chocolate Cupcakes with you. My daughter, Leigh, made this recipe for me the night I arrived home from being in Italy for a week. I was so excited to come home to my family and true comfort food. These are so spectacular. You don’t even need to make homemade icing. I wanted to post the recipe for Father’s Day, but I was traveling again this past week. I realized that this recipe is perfect for so many occasions: Father’s Day, birthdays, parties, showers or just because. I thought they would be a great way to start off the week so enjoy.
Okay, so this post is attributed to my daughter, Leigh, and her friend, Ellen. She spent the night with Ellen a few weeks ago and made these awesome Rice Krispy Easter Eggs. They were googling a fun Easter project, and they found this great idea from Family Fun magazine. She called me and said, “Mom, you must come take a picture of this to post on your blog.” At first, I was like, “Huh?” When I arrived at Ellen’s house, I realized how right Leigh was. These are adorable, fun and a great Easter treat idea for kids. As you notice from my picture, Ellen didn’t have any Easter colored M & M’s, but any colors will do. Happy Easter!
Happy Valentine’s Day to everyone! This is my last dessert for a while, but I wanted to share this recipe for Oreo Cupcakes which has been lightened up. The cupcake part of the recipe comes from Cooking Light magazine. In their recipe, they sprinkled the cupcakes with powdered sugar, and they are great. I love extra chocolate flavor so I slathered mine with chocolate frosting and of course, an Oreo. If you don’t have time to make your own frosting, you can substitute the store-bought icing. The total calories per serving for the cupcake is 150 calories, 5 grams of fat and 24 carbohydrates. Enjoy and have a fun and wonderful Valentines!
