Making a healthy smoothie only takes 5 minutes to prepare and turning it into a smoothie bowl only adds 1 or 2 minutes more. Perfect for a breakfast at home or on the go, this Memorial Day Smoothie in on our family weekend list! I think this recipe will be a wonderful, fun way to kick off summer with the kids  This smoothie bowl recipe is made with dairy products which adds calcium important for bone strength. Strawberries are also the star of this recipe which are filled with antioxidants and said to rival spinach in their health benefits helping protect the heart, aiding in reducing cholesterol, boosting the immune system and reducing risks of cancer, arthritis and even gout. Free free to add some of your favorite toppings, granola, hemp seeds, unsweetened coconut, you name it. The sky is the limit this Memorial Day so be healthy and safe!

I admit it. I have been MIA! Life got a little crazy buying and moving into a new house, but I am back! We are iced in today, so my kids and I made this Spiced Chocolate Covered Fruit recipe. It’s so easy and only 3 ingredients! Dark chocolate is rich in flavonoids, which have heart-protecting properties and are rich in antioxidants.  The protective factors are only seen in dark chocolate that contained at least 60 percent (preferably 70 percent or more) cocoa. There’s nothing better than a healthy snack with only 3 ingredients!

Kids and Adults Favorite: Healthy Strawberry-Pineapple Smoothie

We love smoothies at my house, and my daughter, Leigh, makes them all of the time. These Strawberry-Pineapple Smoothies have been a hit in a lot of kid’s cooking classes I have taught recently. This photo was styled by Lillian, the 7-year-old who I taught a private cooking class with after she prepared the recipe. It’s so simple and refreshing, perfect for breakfast, healthy afternoon snack or dessert. It’s also wonderful after the holidays are over when you want something light, filling and healthy.

Healthy Organic Trail Mix

When I am on the go (which is all of the time), I like a quick healthy snack. This trail mix is perfect because it has the combination of a sweet and salty crunch made with some of my favorite ingredients. Today, I am taping 4 different cooking segments for a new local NBC show, “Daytime Alabama”. I can’t begin to explain what it’s like to prepare for 4 different cooking shows (I thought 1 show was difficult). Don’t get me wrong, it’s really fun. I would like to give thanks to my friend Alacia who helped me prepare for these television segments. 

 

Organic Trail Mix

Prep: 5 minutes

Yield:  6 cups

Ingredients

21/2 cups Oatmeal Squares

2 cups granola

1 cup peanut-butter filled pretzels

2 (10-ounce) package Harvest blend trail mix (I used Back to Nature)

1 (5.2-ounce) dried strawberries

1 (5.2-ounce) dried blueberries

1 (8.3-ounce) yogurt covered raisins

Preparation

1. Combine all ingredients in a airtight container and store at room temperature.
