Guests can also choose a side to accompany their entrée, including the Summer Squash Gratin or Smashed O’Brien Potatoes. The experience winds down with a choice of dessert that includes the White Chocolate Bread Pudding, Cheesecake or Walnut Turtle Pie.

Coconut Crusted French Toast

My summer has been amazing, and last week I was beyond lucky to be in the British Virgin Islands at Peter Island Resort & Spa. It was definitely a bucket list trip, and one of the most relaxing and incredible places I have ever been. The beauty, service, and food at Peter Island is indescribable. On my last day, I had to try their signature breakfast dish, Jean Kelley’s Coconut Crusted French Toast.  When I got home, I asked for the recipe, and I could not wait to share with y’all. Jean, a native of St. Vincent and the Grenadines, has been with Peter Island Resort for over twenty years. Jean embodies the soul and passion of the true Peter Island service. Jean never forgets a guest regardless of how many years have passed between their visits. They say if  you leave Peter Island without trying one of Jean’s Coconut Crusted French Toast or cookies, you haven’t really experienced the island. Jean is also told by many repeat guests that she keeps them coming back year after year. Peter Island is fortunate to have employees like Jean who shows their dedication to delight every guest ever day, one at a time. Pumpkin French Toast

We make French toast every weekend at my house for the kids, and this Pumpkin French Toast is my latest hit. I love to start with Challah bread which is my secret ingredient to this wonderful breakfast. If you can’t find Challah, use Brioche or the closest thing you can find. This recipe even works great lightened up a bit using egg whites and skim milk. Sprinkle Pumpkin Pie Spice over the top for a delicious taste of the season. This is great to serve for the kids, for company or on Thanksgiving or Christmas.

Healthy and Easy French Toast for Mother’s Day or Spring Holidays

We love French toast at my house. We make it just about every Sunday. I developed a healthier version, and this recipe is great. It uses maple syrup or agave nectar, egg whites, a touch of cinnamon and whole grain bread to produce an awesome Healthy and Light French Toast. You can also slice the bread into thin sticks to make French toast sticks (kids love this). Enjoy during the week or weekend and on holidays such as Mother’s Day, Memorial Day and Father’s Day.

Incredibly Easy Blueberry French Toast

Blueberry French Toast

This recipe is perfect for this time of year when spring brunch celebrations are upon us. When we have family brunches, I am always  asked to make this version of Blueberry French Toast. It’s my niece, Jamie’s, favorite, as well as my kids. This recipe is a breeze and can be done overnight. Just see the directions under “preparation” below. It can also be done with strawberries or even bananas in the middle of the cream cheese layer. I love to use Challah bread, but if you can’t find that, use a good French bread.
