Cobbler recipes are my favorite desserts, especially in the summertime. This Red White and Blue Cobbler is perfect for Father’s Day this weekend or the Fourth of July which is right around the corner. This recipe uses fresh strawberries, blueberries, and raspberries but feel free to mix is up and even use blackberries if you like (as long as you get 4 cups). My daughter, Leigh, had to make a Peruvian Quinoa recipe for her advanced Spanish 2 class, which gave her and I the chance to come up with a new quinoa recipe. We experimented with many recipes, but we loved this Vegetarian Quinoa. Luckily, for me, my three kids love quinoa, and it’s a fabulous ingredient because it’s gluten free, rich in protein, contains all 9 of the essential amino acids and so much more. Quinoa is high in iron which helps our red blood cells stay healthy, high in lysene, essential for our tissues growth and repair. This superfood is also high in Riboflavin (B2) which is super important for our brain health and improves our energy and metabolism. It also has twice as much fiber as other grains. Need I say more? Enjoy this for lunch as a side dish or afternoon snack. I spooned it over fresh arugula with some crumbled feta cheese, and it was a great, healthy lunch. Here’s to a great and healthy week ahead!
Looking for a great summer fresh appetizer? Try this Chunky Black Salsa for Fourth of July, Labor Day or for any summer dinner or cookout. It’s so fresh and easy, Be sure to add the avocado in last so it won’t turn brown. Serve on tortilla scoops or on top of a salad. It also makes a great healthy snack.
Oh no. The summer is going by way too fast. It’s been great so far, and there’s nothing better then having relaxed kids and a more relaxed me, (not having to rush to school and after school activities). Happy Father’s Day to all your dads out there! My daughter, Leigh, wanted to make something special for Father’s Day for her dad and mine, so she suggested a Watermelon Sorbet recipe perfect for this time of year. She went searching for a way to make sorbet without an ice cream maker (since we don’t have one). She adapted this recipe from Taste of Home, and this 4 ingredient recipe came out fabulous! All of you dads (moms and kids too) are going to love it! This makes a great dessert recipe to serve for Fourth of July, Labor Day and all summer long. Enjoy and cheers to a great week ahead!
The blueberries this summer are so sweet and juicy, and I’m thrilled that they aren’t expensive either. The other day, I decided to make a simple Blueberry Crisp from a recipe my friends, Nancy and Lissa, sent me. When I put the photo on Facebook, everyone was begging for the recipe. It’s SO hot in Alabama this week with highs today in the 100’s. Since we have an abundance of watermelon in the refrigerator, my daughter, Leigh, thought she would try her hand at making a Watermelon Slushy. I was so impressed that I said, “Hold everything.
