For an fabulous tasting appetizer, try these Pork Eggrolls which are so easy and come out great! These egg rolls make a great alternative finger food for the Super Bowl and are a family favorite served with fried rice or miso soup. Use water to seal the edges, but you don’t need much at all–not even 1 teaspoon on each wrapper. Use the preshredded cabbage already in the package to speed up the preparation time and feel free to substitute ground chicken. You’ll find recipes for everyday favorites to elegant entertaining as well as an array of vegetarian dishes, tips, techniques and photographs. I love this recipe for Spinach and Artichoke Dip. What a simple, brilliant recipe idea! Judith offers great tips in her cookbook. If you prefer a smoother dip, place the artichokes and spinach in a food processor, in separate batches, and pulse until desired degree of fineness is achieved. Then combine with remaining ingredients inc the slow cooker stoneware.

Happy first college football weekend! I have had so many friends asking for tailgating recipes this week, so I decided to compile a list of recipes starting with my Chipotle Vegetarian Chili. Roll Tide! I can’t believe an Alabama team is (once again) in the BCS National Championship. You have no idea what it’s like to live in this crazy, passion-filled football state (Alabama and Auburn) where red jeans and houndstooth are at a premium. I have had many, many requests, phone calls and emails for appetizer recipes. Low Calorie, Low-Fat: Quick and Easy Chipotle Chili

My boys love chili, and we make it often at my house, especially this time of year. With only 248 calories and 4.8 grams of fat, this chili is low in fat and calories. I developed this recipe for Laura’s Lean Beef, but the original recipe has black beans instead of kidney beans and no chipotle seasoning. Both versions are wonderful. If you are really short on time and only have about 10 minutes, I love the Publix seasoning packet. Just add beef, tomatoes and beans, and it comes out great.

New Years or Weekend Company Idea: Crabmeat Quiche

I know Christmas is over, and who can think about more food, but New Years is just one week away. This Crabmeat Quiche recipe is fabulous! It’s so easy to prepare that I promise anyone can make it. I thought it would be great to serve on New Years as an appetizer or even a main dish with a great salad and a nice dessert. It’s foolproof and awesome.

Halloween or Anytime Dinner: Grilled Pork Tenderloin with Light Horseradish Sauce

Everyone asks me what to make on Halloween night for dinner. Like me, they are all so rushed, and the kids are going nuts. I usually do the usual: chili, hamburgers, etc. This year, I am making my life even easier making Grilled Pork Tenderloin with Horseradish Sauce. This recipe is a breeze. Just purchase a pre-marinated pork tenderloin (I like the cracked pepper version) and grill it or prepare it in the oven. Then, stir together this sauce which is oh so delicious. Serve it on mini rolls for sliders (or by itself) for a perfect fall meal.
