Under 30 Minutes to Low-Fat Beef Chili

It has been so cool outside in Birmingham the past few days, so I made one of my kid’s favorites-Basic Low-Fat Chili recipes. With 260 calories and 4.4 grams of fat per serving, you can feel good about eating this heart-warming, simple chili, which my kids love.


My 10 Chili-Making Tips:

1. If your chili is too thick, use broth to dilute it.

2. If the chili is too thin, add tomato paste.

3. Use the best beef you can buy, and add it first.

4. Use fresh vegetables.

5. Cook the chili a day before you plan to eat it.

5. Use dried spices that are fresh.

6. Make a double batch for future meals.

7. Serve leftover chili in tacos, spaghetti, burritos or as a filling in omelets or quesadillas.

8. A touch of unsweetened cocoa powder or coffee give chili an earthy flavor.

9. Freeze leftover chili in an airtight container in individual servings for easy, quick heat-up.

10. Serve as a “Chili Bar” with accompaniments such as sour cream, Greek yogurt, shredded cheeses, onions, crushed blue corn tortilla chips, chopped cilantro and chopped tomatoes.

Note: If you don’t have time to make this recipe. Here’s an awesome shortcut. Purchase the Publix Brand Chili Seasoning Mix and combine with beef, tomato sauce and red kidney beans (as directed on the package), and it tastes like homemade.

Light, Simple and Budget Friendly: Chicken with Olives and Tomatoes

I love cooking in a skillet, especially a grill pan such as this. It’s so easy and quick, and dinner comes together in under 25 minutes. Using chicken cutlets works great in this recipe because they cook so quickly. If you can’t find chicken cutlets at your local store, just slice a boneless chicken breast so it is half the size in thickness. I love this fresh combination of the chicken with grape tomatoes, olives and fresh basil and parsley. It’s perfect this time of year, and my kids love it too. Studio B and Kid’s Culinary Camp This Summer in Alys Beach, Florida

Things have been so busy lately, and I am so excited about this summer! My kids are out of school, and they are so happy about that. Plus, I get the wonderful opportunity to teach kid’s culinary camps in the incredible location at Alys Beach Florida at Studio B. Colleen Duffley, a photographer of 25 years, had a “plan B” to create a studio that brings the best creative talent in food, photography, fashion, art, design, beauty, music and literature. There will be seminars, classes and inspirational lectures by some of the world’s most creative people. Easy Double Chocolate Chip Brownies in under 30 Minutes

This is not one of my typical low-fat recipes, but sometimes you need a special sweet treat. Trust me, these are awesome! I have been searching for an easy brownie recipe, and I finally have found the winner: Easy Double Chocolate Chip Brownies. The recipe is so simple to prepare and can be prepared in 30 minutes. I was asked to make something for the school’s bake sale, and these were highly requested. Also, for Mother’s Day, this brownie pan, below, was one of my top present picks because it makes slicing brownies so easy. This pan also works with any box brownie mix if you’re short on time.
