5 Ingredient Appetizer: Fig and Walnut Chutney

In honor of the “Oscars” tonight, here’s a simple and quick appetizer recipe that is sure to please. With only 5 ingredients, This Fig and Walnut Chutney is awesome served with sliced apples, grapes, crackers and Gorgonzola cheese. In under 20 minutes, you will have a superstar appetizer that your guests (and/or family) will love. This recipe also works well with goat or feta cheese so feel free to substitute your favorite. Not only is this appetizer healthy, but it’s low in fat. It’s a great, quick appetizer recipe to serve for any holiday or entertaining occasion. Simple 5 Ingredient Creative Appetizer: Dirty Martini Cheese Ball

My martini of choice is a Chopin Vodka or Ketel One Dirty Martini slightly dirty with blue cheese-stuffed olives (Satterfields or Flemming’s make the best in Birmingham). This recipe reminds me a lot of my favorite cocktail, hence its name: Dirty Martini Cheese Ball. Even my son, Zachary, who loves blue cheese and olives, begs me to make this. It’s great for a party, and it’s so simple. Just mold it together, let it chill for about 4 hours and then roll in nuts. It’s a sure hit, so cheers!

Five Ingredient Main-Dish Salad: Light Shrimp Caesar Salad great for Earth Day

I used to only prepare Caesar Salads when I was having a large Italian or steak dinner. Now, I make them all of the time since my three kids (who are 8, 10 and 11) love them so much. This version is only five ingredients which is perfect this time of year when you want to eat light (and celebrate Earth Day) but also are in a hurry. Purchase already-peeled and deveined shrimp to save time, or substitute chicken or salmon for the shrimp. If I don’t have time to prepare a homemade dressing, I buy Ken’s Reduced-Fat Caesar dressing, which is really yummy.

Sometimes figuring out what appetizer to serve is the most difficult part of entertaining, especially during holidays or when you’re having special guests over. I appreciate all the sweet notes from newly married couples as well as college students that are trying my recipes and have asked for appetizer suggestions. I try to serve appetizers that are healthy, but of course, flavorful. These stuffed mushrooms fit that description well. The combination of feta cheese, green onions and parsley create a fresh combination. This recipe is only five ingredients (not counting salt and pepper), so it’s also very economical and extremely simple, perfect for new cooks. Coming up with five ingredient recipes can be really challenging as a Recipe Developer, especially when it comes to desserts. I love warm desserts such as cobblers and crisps. A crisp is a dessert of fruit that is topped with a crumbly pastry mixture, usually oats, brown sugar and butter. Using low-fat granola is a great way to cut down on the amount of ingredients. This recipe is very simple, low-fat, great for kids, and it works well in individual baking dishes, such as this clover for St. Patrick’s Day.
