Skillet Blueberry Crisp

Skillet Blueberry Cobbler

Blueberries are at their peak season right now with most grocery stores selling them buy one get one free. I made this Skillet Blueberry Crisp on Sunday night, which only takes 10 minutes of preparation time. It’s so easy, healthy and tastes fantastic! My husband said this blueberry crisp was so good that it did not even need vanilla ice cream (or frozen yogurt to top it off). If you have some on hand and want that cold and warm temperature combination, feel free to add it. I used my 61/2-inch cast-iron skillet, but if you only have the larger one, you can double the recipe. Blueberries are also healthy for you. In only 80 calories per cup and virtually no fat, blueberries offer many nutritional benefits. They are packed with Vitamin C and are a good source of manganese (which is important in bone health). Blueberries have antioxidants that can improve vision and promote quicker adjustment of the eyes to darkness. They can also improve memory and reduce the risk of infections. They have high levels of compounds that help widen arteries and can help blood flow. Blueberries are also a good source of fiber, and they have phytonutrients that protect cells from damage. This recipe is great to serve to kick off summer, and it will be awesome to serve on Memorial Day and Fathers’s Day too!

Red White and Blue Cobbler

Red White and Blue Cobbler by @alisonlewis

Cobbler recipes are my favorite desserts, especially in the summertime. This Red White and Blue Cobbler is perfect for Father’s Day this weekend or the Fourth of July which is right around the corner. This recipe uses fresh strawberries, blueberries, and raspberries but feel free to mix is up and even use blackberries if you like (as long as you get 4 cups). To find out which berry is the healthiest, read my one of my recent posts on Fitness Republic. You may find the answer interesting!

Watermelon Sorbet Recipe

Happy Father’s Day to all your dads out there! My daughter, Leigh, wanted to make something special for Father’s Day for her dad and mine, so she suggested a Watermelon Sorbet recipe perfect for this time of year. She went searching for a way to make sorbet without an ice cream maker (since we don’t have one). She adapted this recipe from Taste of Home, and this 4 ingredient recipe came out fabulous!  All of you dads (moms and kids too) are going to love it! This makes a great dessert recipe to serve for Fourth of July, Labor Day and all summer long. Enjoy and cheers to a great week ahead!

Two Ingredient Raspberry Popsicles

When I first saw “Sparkling Ice”at a friends house, my 3 kids begged me to buy it. After taking a look at the ingredients, I thought, “Why not give it a shot.” They loved all of the flavors, but it is also great to use in cocktails and even popsicle recipes. The Black Raspberry flavor was one of their favorites, and I love how easy it is to make Two Ingredient Raspberry Popsicles. Sparkling ICE is also a great alternative sport drink beverage for people of all ages. Sparkling ICE combines fresh spring water, natural fruit juices and vitamins and antioxidants to create tasty, lightly-carbonated refreshments in assorted thirst-quenching flavors. It’s a great alternative to soft drinks. It is caffeine-free, Kosher U and free of sodium and carbohydrates. For more information, see their Facebook page or website.

Sparkling ICE retails for $1.29, or $12-$15 for a 12 pack. Flavors include Coconut Pineapple, Lemon Lime, Kiwi Strawberry, Lemonade, Orange Mango, Pomegranate Berry, Pink Grapefruit, and Black Raspberry. Sparking ICE is available at retailers nationwide, including Kroger, Wal-Mart, Sam’s Club, Publix, Winn Dixie, Amazon and more.

Any Occasion Chocolate Cupcakes

This is not one of my typical “lightened-up” recipes, but I had to share these Any Occasion Chocolate Cupcakes with you. My daughter, Leigh, made this recipe for me the night I arrived home from being in Italy for a week. I was so excited to come home to my family and true comfort food. These are so spectacular. You don’t even need to make homemade icing. I wanted to post the recipe for Father’s Day, but I was traveling again this past week. I realized that this recipe is perfect for so many occasions: Father’s Day, birthdays, parties, showers or just because. I thought they would be a great way to start off the week so enjoy.
