I’m on a main-dish salad kick this week since it’s so hot outside. I’m also so busy developing and testing recipes for a Christmas project for a major brand. It is so fun to think about Christmas and smell holiday dishes cooking in my kitchen in July. Testing heavier recipes for work makes me want something really light and healthy for dinner. This recipe is one of my favorites for this time of year. I love the freshness of grapefruit, oranges and basil served with the shrimp. When I make this, it’s gone within minutes. It’s very low in carbs, fat, calories and gluten-free.

Easy, Healthy Summery Recipe: Shrimp Caesar Skewers

The two food items that all of my three kids love, is shrimp and Caesar Salad. So I knew that when I came up with the recipe for Caesar Skewers for Kraft, I better make plenty for everyone. This recipe is too easy for words, only 15 minutes of prep time. Feel free to purchase already-cooked, frozen shrimp if you find that it’s cheaper. I have been buying it a lot lately, and the quality is great. Enjoy this as summer nears for a light one-dish meal.

Spring is Here: Easy Sensational Shrimp Salad

When I was at the beach last week, I ate a Georges in Alys Beach, and there were wonderful spring salads on the menu (I ate there 3 times). This great food made me want to do a television segment on great spring salads. Today I taped several segments for NBC 13 “Daytime Alabama”. My version of Sensational Shrimp Salad was one salad I made, and they loved it! I took a shortcut and used already cooked, peeled and deveined shrimp. The flavors of white wine vinegar, fresh dill and Dijon mustard create a fresh and light dressing mixture for the shrimp. I will let you know the day the show will air, but here’s the recipe early.

Easy Appetizer or Main Dish: Cajun Shrimp Skewers

My kids love shrimp, especially my oldest son, Alec. I can’t go wrong making shrimp at my house, and when it’s on a skewer, it’s even that much better. This recipe is so easy with the combination of lemon juice, Cajun seasoning, garlic and fresh parsley. It’s so flavorful perfect for football parties, Thanksgiving or Christmas appetizers or any weeknight main dish.

Simple Four Ingredient Grilled Shrimp

This recipe is beyond simple. With only four ingredients: lemon pepper, shrimp, fresh lime juice and olive oil, that’s really all you need besides your favorite cocktail sauce. I used “Naturally Fresh” cocktail sauce ¬†(which I found at Whole Foods). I am teaching a cooking class for college students in two weeks, and this is perfect for them or anyone in a hurry who wants something fresh and delicious.
