3 Ingredient Easter Bars

My daughter, Leigh, saw a version of this recipe for 3 Ingredient Easter Bars on the blog Chelsea’s Messy Apron, and she begged me to get all of the ingredients to make them. I had refrigerated cookie dough at home so we twisted Chelsea’s recipe for Confetti Bars into a creation of our own. I’ll admit that Leigh did most of it on her own, and with my suggestion only needed 3 ingredients.  They are a super sweet dessert just in time for Easter!

Easter Lamb with a Twist: Almond-Crusted Lamb Chops in Under 25 Minutes

I know this may not be the “traditional” Easter Lamb dish that you might see in all the magazines and cooking shows, but this recipe is so great for many reasons. These Almond-Crusted Lamb Chops are light and healthy. They are lightly coated with Dijon mustard, almonds and touch a touch of olive oil. I used sea salt (which you will start seeing a lot of in my upcoming recipes) since it offers some extra nutrition in the form of minerals. I used a small rack of lamb, and it worked to perfection. They were juicy, tasty and can be prepared in under 30 minutes.

Easter Dessert: Seriously Simple Pound Cake

While at my conference last week in Denver, I had a conversation with a cookbook publisher to kick around some cookbook ideas. He asked me,  ‘What is it that I am specifically passionate about?” Obviously, I am passionate about this blog, or I wouldn’t be doing it. One of my other clients said, “I light up when I talk about the blog”. So, I started thinking… what is it that I love that I would want to do a cookbook on? I love simple, fresh food. I love sweet treats that are easy to prepare, but still taste awesome. I love easy meals that even my kids will eat without complaining. I love when I can cut corners to make a recipe a bit “lighter,” but without sacrificing flavor. I am not sure where this gets me when thinking of a cookbook title, but I hope it will come to me soon. Easter Brunch or Appetizer-Simple Smoked Salmon Dip

A lot of my newly married couples and friends have been asking me for Easter brunch recipe ideas. I had to do some thinking because I was trying to come up with a really light, delicious easy recipe that would work for a Easter brunch, lunch or dinner. I also wanted a recipe that would work for Passover. I love smoked salmon so I thought this would be a perfect fit. It’s so quick, delicious and light. I served it as my appetizer for my dinner last night, and it was a major hit.
