Gluten Free Double Chocolate Chip Cookies

Double Chocolate Chip Cookie

Lately, I have been on the hunt for a gluten-free cookie mix that is all natural with no preservatives. And most importantly…one that tastes good. Guess what? I found one. Simple Mills is all-natural almond flour based baking mixes that are naturally gluten-free and paleo friendly. The beauty of the mixes is that they only contain real ingredients, such as baking soda and coconut sugar so they’re not filled with preservatives like other mixes.

Simple Mills Cookies

I am so excited to be a part of their “12 Days of Cookie Campaign,” and each cookie during the campaign connects to a specific personality type. I am creating a cookie recipe that fits my personality, “classic and traditional.”  I used their Chocolate Chip Cookie Mix to create these Double Chocolate Chip Cookies. This recipe reflects my personality of my classic and traditional fashion sense, but also because if you follow me, you know I like to take a classic traditional recipe and put my healthy twist on it. In this recipe, I added cacao powder instead cocoa powder because I like its chocolate flavor and that it is made with less processing. It gives the traditional chocolate chip cookie an extra health boost and scrumptious chocolate kick.

These cookies are perfect to give as gifts over the holidays, especially if you have friends or loved ones who like gluten-free and paleo sweets. Those cookies are so easy to prepare, only 15 minutes, perfect for the holiday rush.  Follow Simple Mills and their cookie campaign and amazing products and recipes on social media channels below. Be sure to check out the Pinterest account as there are board gift ideas for every personality.

Flourless Chocolate Cookies

A friend recently passed me this recipe for Flourless Chocolate Cookies, and she told me to try them. I am always willing to try any new flourless or gluten free recipe, especially when it comes to dessert.  She was absolutely correct when she said they were simple as can be. If you’re on a gluten-free diet or trying to watch your flour intake, these are perfect for you. Feel free to double the recipe because they go really fast. Just be sure to store them in a cool, dry place. These cookies would also be wonderful served on Passover so stash this one away for next spring.

Leigh and Zachary’s Favorite Chocolate Chip Cookies

Everyone thinks Leigh and Zachary, my middle and youngest children, are twins. They are actually two years apart, but they are so close in size that I get that question all of the time. They are both incredible kids and are huge food lovers as well as helpful in the kitchen. This is one of their favorite chocolate cookies from Southern Living magazine. If you’re looking for a wonderful but basic Chocolate Cookie recipe, look no further.
