For Mother’s Day tomorrow, here are 5 healthy Mothers Day breakfast recipes (all smoothie bowls). All of these recipes are easy, healthy and filled with raw, sweet fruits just in time for spring and Mother’s Day. Everyone loves oatmeal at my house, so I thought I would make my life easier by making this Overnight Apple Pie Oatmeal. With only 5 minutes of preparation time, this tasty breakfast is a ready when you wake up in the morning (the kitchen smells amazing too). Feel free to use your favorite apples and add honey, nuts, flaxseed or dried fruit to top off your morning oatmeal, but it’s also so good on its own. I used my new slow cooker below, which is my favorite new culinary toy. It’s so cute, useful and inexpensive too!

Blueberry Banana Bread with Greek Yogurt

To start off the new year, I made this Blueberry Banana Bread with Greek Yogurt this weekend which was an absolute hit! No mixer is need for this recipe so this is great to make with the kids help. Add everything except the blueberries to one bowl and stir. Then, fold in the blueberries and pour batter into a prepared pan. I like to make this the night before so it’s ready for breakfast the next day. My kids love this for breakfast, in their school lunch or for an afternoon snack or dessert. Fruit and Yogurt Parfait

For breakfast or an afternoon snack, this Fruit and Yogurt Parfait is our newest favorite! We have been also snacking on freeze dried fruit. So what exactly is freeze dried fruit?  Say hello to Fruttata freeze dried fruit.  In case you’re not familiar, the crisps are created via freeze drying , the process of removing moisture from food through a dryer at -40°F. Made from the freshest fruits, Fruttata is the ultimate, tasty ingredient to incorporate into your favorite recipes.  These also make wonderful snacks, but also work great in this Fruit and Yogurt Parfait recipe.

Breakfast is super important for our daily nutrition. But I am really tired of simple cereals every morning.  If you have the same issue with me and want to try something easy, healthy and fun, stick to this recipe for Lemon Feta and Parsley Egg Cups. This dish can provide you the dietary fiber and gain the strength and energy to carry you through a hectic morning.

We are already in our second week of school. Can you believe it? No matter what age your kids are (mine are 13, 15 and 17), school mornings can be hectic. I needed a healthy back-to-school breakfast recipe that was going to make my kids smile in the morning, so I came up with these Pancake Yogurt Breakfast Bites using Kellogg’s Mini Pancakes. The frozen food aisle has become my best friend lately with so many fabulous items that are a great value and allows the busiest of people to be creative in the kitchen. Don’t forget that there are a variety of different cuisines represented on this aisle, including options that cover snack-time, breakfast, lunch, dinner, entertaining and specialty food occasions. With back to school schedules and fall activities, this aisle makes my life so much easier (and sometimes less expensive). This breakfast recipe is just a start. Feel free to add your favorite toppings such as Nutella and sliced bananas (see below)  to make something new for breakfast, an afternoon snack or dessert. Light, Delicious Breakfast Idea: Blueberry-Orange Muffins

It’s hard to believe that my three kids rarely ever eat cold cereal for breakfast. Maybe, it’s because I spoil them (most likely my fault). I love new breakfast ideas that are great for breakfast on the go (our mornings are pretty hectic). These Blueberry-Orange Muffins are ideal because they are easy to make, so healthy and yummy, and they even make a great afternoon snack. Feel free to use cranberries instead of blueberries and all-purpose or whole wheat flour.

For breakfast this weekend, I am making Pecan Waffles. My daughter, Leigh, is away at camp, and I miss her so much! She is the one in the family always wanting to make waffles. She pulls out the waffle iron and makes the batter on her own (she even made them on live television). I don’t always use the powdered sugar and butter, but maple syrup is almost all you need with this delicious recipe (and Leigh wouldn’t have it any other way). 

Healthy and Easy French Toast for Mother’s Day or Spring Holidays

We love French toast at my house. We make it just about every Sunday. I developed a healthier version, and this recipe is great. It uses maple syrup or agave nectar, egg whites, a touch of cinnamon and whole grain bread to produce an awesome Healthy and Light French Toast. You can also slice the bread into thin sticks to make French toast sticks (kids love this). Enjoy during the week or weekend and on holidays such as Mother’s Day, Memorial Day and Father’s Day.

This recipe is perfect for this time of year when spring brunch celebrations are upon us. When we have family brunches, I am always  asked to make this version of Blueberry French Toast. It’s my niece, Jamie’s, favorite, as well as my kids. This recipe is a breeze and can be done overnight. Just see the directions under “preparation” below. It can also be done with strawberries or even bananas in the middle of the cream cheese layer. I love to use Challah bread, but if you can’t find that, use a good French bread.
