Halloween Healthy Snack: Apricot-Almond Snack Mix

I try to make new snack mixes for my kids, especially around holidays. I made this one up the other day, and my kids said it looked like Halloween. Feel free to add any of your favorite nuts or dried fruits. Beware though, once you starting eating it, you can’t stop.

So Unbelievably Great Snack Mix: Sesame-Wasabi Cherry Mix

I had this snack mix last week at my friend, Debbie’s house, and I was addicted. It’s so simple and basic, with the sweet dried cherries, spicy wasabi peas, crunch of the walnuts and salty sesame sticks. This is a great holiday snack as well. The green and red colors are perfect for Christmas. You may want to double or triple the recipe, by the way. Enjoy!

Five Ingredient Low-Fat Pear-Cherry Crisp for St. Patrick’s Day

Coming up with five ingredient recipes can be really challenging as a Recipe Developer, especially when it comes to desserts. I love warm desserts such as cobblers and crisps. A crisp is a dessert of fruit that is topped with a crumbly pastry mixture, usually oats, brown sugar and butter. Using low-fat granola is a great way to cut down on the amount of ingredients. This recipe is very simple, low-fat, great for kids, and it works well in individual baking dishes, such as this clover for St. Patrick’s Day.

Chocolate-Pistachio and Cherry Bark

Last week I posted White Chocolate, Pistachio and Cherry Bark, and it was an instant hit. For those of you who don’t love white chocolate or who may want to give a gift combination of white and dark chocolate, here is the option of using semisweet or dark chocolate. The recipe worked great (the dark chocolate is my favorite), and is so easy that it doesn’t seem possible it could taste this delicious. Enjoy, but beware…it is very addictive!

Dried Cherry and Pistachio Bark

Feel free to double or triple this recipe. To see White Chocolate version, see last weeks post.

Prep: 5 minutes

Cook: 1 minute

Yield: 11/2 pound

Ingredients

1 (12-ounce) package semisweet or dark chocolate morsels or chunks

1 cup pistachio nuts, shells removed and toasted

1 cup dried cherries or cranberries (or half-and-half)

Preparation

1. Place chocolate in a microwave-safe bowl, covered with wax paper on HIGH 1 to 2 minutes or until melted, stirring once. Add pistachios and cherries, stirring well. Spread on large baking sheet covered with parchment paper.

2. Refrigerate 1 hour or until firm. Break bark into pieces. Store in a tightly sealed container in refrigerator up to 1 month. Pack in decorative boxes or tins lined with wax tissue paper or colored cellophane for gift giving.
