I have been working with root vegetables for a big client recipe testing project this week, and I was so excited to make Curried Sweet Potato Soup recipe. This warm, healthy soup with sweet potatoes is ideal for the changing temperatures. It’s also super healthy and made with detoxifying ingredients such as cinnamon, curry powder, and even spinach. If you’re short on time, this easy soup can be whipped up with basic ingredients found in the pantry. Pair it with a salad for a wonderful weeknight meal. As the weather cools down, what a better way to warm up then with a healthy soup that helps you lose those extra pounds at the same time. The curry in this Spicy Carrot Soup may raise your temperature, but the soup itself is light enough to satisfy your hunger without weighing you down. It is filling too, and even my three kids loved it! The soup is flavored with curry (so it’s not too spicy for kids). Curried Butternut Squash Soup

Did you know butternut squash is technically a fruit? It’s a member of the gourd family along with pumpkin, cucumber and melon as they all have seeds. Its orange color adds to its power of nutrients known as carotenoids shown to protect against heart disease. Butternut Squash also has significant amounts of potassium and vitamin B6 and folate. It’s low in fat and is a good source of fiber. I love using it in soups and this Curried Butternut Squash Soup is so easy, flavorful and heart-warming. Serve with a salad and crusty bread, and that’s all you need.

Spring Salads: Curry Chicken Salad

I love Curry Chicken Salad, and this is one of my favorites. It’s really quick and easy because I like to use rotisserie chicken to simplify things. The combination of chutney, white wine, curry, cranberries and nuts flavor it to perfection.
