Lightened Up Pumpkin Dip: Kid Friendly

Yay, it’s October, so let’s get cooking with pumpkin! Pumpkin is one of the most nutritious fruits, packed with disease-fighting nutrients such as alpha and beta-carotene, fiber, Vitamins C and E, potassium and magnesium. The carotenes found in pumpkin are potent with antioxidants, which promote healthy vision, ensures proper immune function and slows the aging process. My three kids love this dip as much as adults so you may want to make extra. Serve it with apples, pears, gingersnaps or graham crackers for an appetizer or healthy snack. It’s always perfect to make during Thanksgiving or Christmas too!

 

Low-Fat Appetizer: Smoked Salmon Roll-Ups

I’ve had a lot of friends and readers asking me, “What appetizers are you making for Thanksgiving or holiday parties this year?” These Smoked Salmon Rolls are one of my favorite recipes. They are only 4 ingredients, and they’re completely simple to prepare. My kids love smoked salmon, so it’s also true crowd pleaser. What I also love about them is that you can make them them up to 8 hours ahead of time, and they make a great brunch recipe as well.

Holiday Upscale Appetizer: Uptown Fromage

I made this appetizer for my dad’s 80th birthday dinner last week at my sister’s house. It’s really easy, beautiful and filled with wonderful flavors of sun-dried tomatoes, basil pesto, oregano and goat and cream cheese. I got it out of the book, “Recipes Worth Sharing” by Favorite Recipes Press. It’s a great cookbook and has wonderful recipes for family gatherings and occasions such as this. Awesome Apricot Noodle Kugel Great for Brunches and Yom Kippur Break-the-Fast

For years, I have searched for the best Noodle Kugel (casserole) for brunches, holiday gatherings and for Yom Kippur. This recipe for Apricot Noodle Kugel is so awesome. I prepared it for a holiday cooking class two weeks ago, and everyone went wild over it. It’s so easy and really is just dump, mix and bake. It’s prefect when you want a sweet noodle casserole for any holiday or large family event.

Kid’s Favorite Fall Treat: Pumpkin Maple Cookies

I just finished up a huge holiday cookie recipe project, and these Pumpkin Maple Cookies were my kid’s favorite. The pumpkin flavor combined with maple syrup, nutmeg and cinnamon is fabulous, and they are moist and not too sweet. School starts next Tuesday, and these are perfect for school lunches, fall, Christmas or anytime of the year.

Incredibly Easy Blueberry French Toast

This recipe is perfect for this time of year when spring brunch celebrations are upon us.¬†When we have family brunches, I am always ¬†asked to make this version of Blueberry French Toast. It’s my niece, Jamie’s, favorite, as well as my kids. This recipe is a breeze and can be done overnight. Just see the directions under “preparation” below. It can also be done with strawberries or even bananas in the middle of the cream cheese layer. I love to use Challah bread, but if you can’t find that, use a good French bread.
