Just in time for Father’s Day, July 4th and summer picnics and get-togethers, this Healthy Corn Salad is a combination of some of my favorite ingredients. I always tell my kids that summer corn tastes just like candy. This makes the perfect summer side dish served with chicken, steaks, pork and seafood. Corn is also very healthy as it’s a rich source of vitamins A, B, E and many minerals. Its high fiber content is good for digestion. The antioxidants present in corn act as a anti-carcinogen agents and can help prevent Alzheimer’s disease. Enjoy all summer long and if you’re making this in the winter, feel free to use frozen corn. Just thaw it, bring to room temperature and proceed with the instructions above.

Grilled Corn Salad

I love summertime salads, and I am so fortunate that my kids do too. I bought some fabulous fresh summer corn at the Farmer’s market last week and decided to make a Grilled Corn Salad.  The corn was so sweet and amazing that when I tossed it with tomatoes, onion and basil it did not even need any specific dressing, lime juice or even salt and pepper. I served it over arugula with a slight drizzle of sherry vinegar and olive oil and it was divine! Don’t forget that corn is so healthy! I often have people asking me isn’t corn fattening and filled with sugar? Actually, one ear of corn has about the same number of calories as an apple and less than one-fourth the sugar. Corn also not only provides the necessary calories for healthy, daily metabolism, but is also a rich source of vitamins A, B, E and many minerals. Its high fiber content ensures that it plays a significant role in the prevention of digestive ailments like constipation and hemorrhoids as well as colorectal cancer. The antioxidants present in corn also act as anti-carcinogenic agents and prevent Alzheimer’s disease. Enjoy this month, Labor Day weekend, or for any summertime dinner while corn is in its peak season.

Summer Fest 2010: Fresh Corn, Cherry Tomatoes and Basil

One big job of a recipe developer and blogger is to consistently read as many food blogs as I can. I found out about a wonderful summer blog event that started last week from one of my favorites, White On Rice Couple’s blog. They are part of Summer Fest Community which is in it’s 3rd year celebrating the peak harvest season of produce. This idea was created by Margaret Roach and Deb Puchalla. For the next several weeks, talented bloggers are sharing their recipes or growing tips for ingredients and produce. Margaret Roach from A Way to Garden has chosen to feature corn this week. I love this Corn-Tomato and Basil side dish using fresh corn, cherry tomatoes, basil and Parmesan. Feel free to cook your corn on the grill or however you like.
