Best Christmas Cookies Ever

Best Christmas Cookies Ever

My daughter, Leigh, made this cookie recipe from Allrecipes for all of her friends for holiday presents. They came out so good that we had to make them again for Christmas this week. This recipe is foolproof and easy. I love the icing with a touch of almond extract if you like a light almond flavor. Make sure you have your cookie cutters on hand and plenty of flour on your counter for rolling the dough. Feel free to half the recipe if you want to make a smaller batch, but we warn you. Your family and friends won’t be able to stopping eating these! Thank you Leigh for all of your help!

Oreo Ice Cream

Oreo ice cream

I received an ice cream maker for one of my wedding presents, and the kids and I are obsessed with it! My husband’s mom makes homemade ice cream for every holiday, so I had to step up my non ice cream making abilities  and learn the craft. This Oreo Ice Cream recipe is one of my first creations. This recipe is so easy with only 10 minutes of preparation time, and it can be made several days in advance. Substitute your favorite chocolate chip cookie or candy bars for the Oreos if you wish. Happy Memorial Day!

Hanukkah Sugar Cookies

Hannukah Sugar Cookies copy

My daughter and I are always looking for a super easy sugar cookie recipe this time of year to make holiday cookies for Christmas and Hanukkah. My friend, Ashley, used this recipe from Allrecipes.com, and these Hanukkah Sugar Cookies are amazing!  These are really light, soft and not too sweet. Just be careful, you can’t stop eating them once you start. This recipe is also really simple and perfect for Hanukkah, Christmas or anytime of the year. Hanukkah, the Jewish Festival of Lights, starts at sundown tonight and until the evening of December 24th. The story of Hanukkah is one of revolution and miracles. Jewish people light menorah candles, one a night, for eight nights, gift gifts and eat fried potato pancakes (latkes). People always get confused on lighting the candles and which way to start so here you go:

On the first night of Chanukah, set one candle to the far right of the menorah. On the following night add a second light to the left of the first one, and then add one light each night of Chanukah—moving from right to left. Each night, light the newest (leftmost) candle first, and continue lighting from left to right. In other words, we add lights to the menorah from right to left, and we light from left to right. Happy Hanukkah from my family to yours!

St. Patricks Day Trail Mix

Last week someone asked me for a great trail mix recipe. I quickly threw some ingredients I had on hand: granola, almonds and chocolate covered goji berries and made this super easy St. Patricks Day Trail Mix just in time for the holiday. It makes a great early morning or after workout pick-me-up or afternoon snack. Here are a few of my other favorite St. Patricks Day recipe ideas:

Pistachio Key Lime Shortbread Cookies from Barbara Bakes

Mint Brownies from Sweet Pea’s Kitchen

Homemade Baileys Irish Cream from Averie Cooks

Turtle Cookies

I know I say it often, but my daughter, Leigh, is an amazing girl. No new task is too much of a challenge for her, and she is becoming quite the cook and baker. She recently found this recipe for Turtle Cookies on Pinterest from the Pixelated Crumb, and she had to make them. I admit that I helped her a bit, but these came out incredible. She said, “These taste like a chocolate lava cake” while they were warm, and she was correct. The caramel makes this cookie even better. OMG! We both agreed (as well as my two boys) that these are some of the best cookies we have had in a long time. Thank you Leigh for this fantastic cookie recipe find!

Chocolate Chip Cookie Recipe with a Twist

This past weekend I had the craving to make homemade Chocolate Chip Cookies. I asked my friend, Nancy, “What is your latest favorite Chocolate Chip Cookie recipe? She told me that she takes any favorite chocolate chip cookie recipe, and she adds cinnamon to it. My daughter, Leigh and I headed to the kitchen and made five dozen of these Chocolate Chip Cookies. We were invited to a football party that day so we brought a few dozen. Our friends later texted me that zero were left. I used the famous Nestle Tollhouse recipe and added one teaspoon cinnamon and that was it. How easy is that? They were moist, soft and even better the next day. Try this Chocolate Chip Cookie recipe with a a little twist!

Mandel Bread for Rosh Hashanah and A little Personal

Rosh Hashanah, the Jewish New Year, starts tonight. Mandel Bread is staple dessert on our holiday table. It reminds me of a biscotti-style cookie, and is fantastic for dessert or breakfast served with coffee. My sister, Julie and my sister-in-law Debby, make the most incredible Mandel Bread I have ever tried. This is one of my favorite Mandel Bread recipes from my friend, Andy’s mom, Judy Rotenstreich. I am so thrilled to be serving Mandel Bread this year at my dad’s house with 21 other people after moving less than a week ago.

To get a little personal, I moved last Monday with my 3 kids into my dads house in Birmingham. Since my mom passed away recently, this was the perfect option for him and for me. It has been wonderful this week eating breakfast and dinner with my father as well as taking a work break and making him a morning smoothie. He has been very depressed the past few months (after the death of my mother), and he already seems like a different person. He said two days ago, “The highlight of the day was when Leigh (my daughter) came to tell me goodnight.” I cried.

My friend, Sara, told me the other day, “To find blessings during tough times”, and she is so correct.

-It is a blessing for kids to get the chance to live with their grandparents.

-It is a blessing to help to your parents when they are elderly.

-It is a blessing when your kids say that they slept great.

-It is a blessing to hear my kids laugh during tough times.

-It is a blessing to see your kids relaxed.

-It is a blessing that I still have my father, but that I can feel my mothers presence.

-It is a blessing to have all of your support.

So whether you celebrate the Jewish new year or not, here’s to fresh and new beginnings and a sweet new year!
