Slow Cooker Spinach and Artichoke Dip

Crockpot Spinach and Artichoke Dip

Now that school is starting back, having a slow cooker is a handy appliance that can be a  lifesaver. Author, Judith Finlayson shares how to create 175 different recipes in her latest book “175 Essential Slow Cooker Classics” and how easy and convenient it is. You’ll find recipes for everyday favorites to elegant entertaining as well as an array of vegetarian dishes, tips, techniques and photographs. I love this recipe for Spinach and Artichoke Dip. What a simple, brilliant recipe idea! Judith offers great tips in her cookbook. If you prefer a smoother dip, place the artichokes and spinach in a food processor, in separate batches, and pulse until desired degree of fineness is achieved. Then combine with remaining ingredients inc the slow cooker stoneware.

This recipe is fabulous for an appetizer for busy school nights, tailgating, football parties, Labor Day and more. Enjoy and be sure to check out this book at the link here.

Three Cheese Baked Penne and Giveaway

For the Oscars tonight or any weeknight dinner, I love this Three Cheese Baked Penne with Roasted Vegetables. This is the type of make-ahead casserole that is perfect to take to a potluck dinner or for someone who just add a baby. I love serving to company, especially if there is a vegetarian in the crowd. Your family will love it too, and you can easily make it in two 9-inch (2.5 L) square baking dishes to freeze one and enjoy the other now. A crisp green salad goes well with the smooth texture of the deliciously melted cheeses. This recipe is one of many fabulous ones in the 125 Best Casseroles and One-Pot Meals Cookbook by Rose Murray. You’ll find everything in this book from big casseroles, to long-simmering stews as well as skillet meals such as quick stir-fries. And… I am giving away a copy.

To enter the giveaway, leaving a comment telling me your favorite casserole. For more chances to win, do the following and leave a comment telling me you did. The winner will be chosen randomly on Monday, March 10th at 8 A.M. Good Luck! :)

Sesame, Hemp and Carrot Slaw & Cookbook Giveaway

When I saw Chef Douglas McNish’s new cookbook, “Eat Raw, Eat Well”, I could not wait to check it out. This huge collection of 400 recipes appeals to newcomers and veterans of the raw food lifestyle. From breakfast to dessert, there is something for everyone and a great deal of information on preparing ingredients, nutrition and raw pantry essentials. I am thrilled to share this recipe for Sesame, Hemp and Carrot Slaw. Douglas says, “This take on classic coleslaw has virtually all the same flavors and textures but is much more nutritious because the healthy fats in the hemp seeds and hemp oil are much better for you than those contained in generic store-bought mayonnaise. This can serve as a crunchy addition on top of a green salad or as a meal on its own.”

To enter for a chance to win this cookbook, leave a comment telling me what intrigues you about the concept of “raw food”. For more entries do the following and then leave a comment letting me know you completed the steps. Winner will be drawn Tuesday, May 1st at 8 a.m CST.

Croque Monsieur Grilled Cheese Sandwich

Yay to April and National Grilled Cheese Month! I thought I would feature one of my favorite grilled cheese recipes, Croque Monsieur, from my latest cookbook “400 Best Sandwiches: from Classics & Burgers to Wraps and Condiments”. This French-style ham and cheese sandwich typically has Gruyere or Emmenthal cheese. It originated in France as a fast food snack in cafes and bars. It’s so easy to prepare, and it’s the ideal comfort food. Be sure to check out my lightened up variation as well.

Weekly Food Review Day: All About Ice Cream

Buy the book

My friend, Amy, is a longtime great friend. She was my very first blog fan and is always making great suggestions and tossing around ideas for me to consider. She recently suggested I designate a certain day of the week as “review day”, which I had been thinking about doing as well. Since she’s a huge ice cream lover, I thought I would start here. I love this cookbook “Perfect Scoop” by David Lebovitz. It has so many great recipes for ice cream, granitas, sorbets, sauces, toppings and “mixins”. One of my favorite healthier recipes in the book is Strawberry Granita. You don’t need an ice cream maker for this recipe, but if you’re looking for a new ice cream maker, check out the one below by Deni. I have it in hot pink and neon green, and it works as cool as it looks. Check out the links below for more information.
