Health, Diet and Super Foods Seminar at Bikram Yoga Birmingham

Exciting news….I turned in my second cookbook manuscript this afternoon. It will be released this fall and will be published by Robert Rose Books. More fun news: I’ll be at Bikram Yoga Birmingham tomorrow (Saturday morning – see below). Virginia Willis New Cookbook Giveaway & Winter Greens and Butternut Squash Gratin Recipe

I was fortunate to meet Virginia Wills several years ago, and I had the pleasure and honor to co-speak with her last year at Food Blog South. Lazy Lasagna and “Substitute Yourself Skinny” Cookbook Giveaway

Tuna Checkerboard Sandwiches for Back to School Lunches

It’s so fun to mix and match different types of bread to jazz up the kids’ sandwiches. This recipe for Tuna Checkerboard Sandwich gives regular tuna a twist using lemon juice and white wine vinegar instead of mayonnaise. It is healthier, light and a great new way to get the kids to eat more tuna. Homemade Ice Cream Sandwiches

For Fourth of July weekend, I wanted to share my recipe for Homemade Ice Cream Sandwiches from my new cookbook “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. I came up with this recipe last summer while I was working on this book. My three kids were in the kitchen helping me, so I tried to make it as simple as possible. It is perfect to serve this weekend if you are celebrating with friends and family, or anytime this summer. Use your favorite homemade chocolate recipe or store-bought cookie dough.

Easy Pork Fajitas for Cinco De Mayo

It’s been a wild week in Alabama. So many heartbreaking stories and scenes of destruction just a mile or so away. We are very lucky even though it’s 6 days and no power. Work and life continues, and I’m headed to Nashville on Friday to be on Newschannel 5 “Talk of the Town” at 11 a.m doing a sandwich show for my new book “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. Before I go, I thought I would leave you with one of the easiest recipes for Pork Fajitas. I like to use thinly sliced pork tenderloins that can be found at the grocery store. These are thin, healthy, low-fat and cook very quickly. Happy Cinco De Mayo everyone!
