It has been an amazing healthy summer, and I have some BIG news! I am working on my third internationally published cookbook! YAY!!! This book is a “Healthy Recipe” topic which is still hush hush for now. This Easy Homemade Muesli recipe might be in one of the chapters. It’s filled with oats, seeds and your favorite dried fruits. My kids have been indulging on this cereal (having no clue how many healthy seeds are included). Enjoy for breakfast with milk or yogurt or just as a snack. Happy Monday, love all of you!

I decided to make this Parmesan Butter Popcorn for the kids so I started with Brummel & Brown, of course. I popped the popcorn in the Brummel & Brown and made a simple Parmesan Butter topping with Parmesan, sea salt and cracked pepper. This is much healthier than other popcorn alternatives and just as easy! My kids devoured it!

Happy May and Cinco De Mayo! I am finally back from Italy, and now is the time to spice it up for summer entertaining just in time for Mother’s Day, Memorial Day, graduation, lake and beach parties. I made this Taquito Layered Dip today when I was having some friends over, and I saved a ton of time by using Chicken Taquito’s by Jose Ole. Feel free to use the chicken or steak varieties, and add your favorite southwestern toppings such as black olives, cilantro, avocado or jalapeños. You can also make your life simpler (and sometimes save money) using frozen foods to create fabulous appetizers, main dishes and even desserts. 3 Ingredient Coffee Milkshake

We are HUGE fans of milkshakes at my house, and my kids are always concocting recipes and new variations. Since my youngest son, Zachary, loves coffee ice cream, he blended only 3 ingredients together to make this amazing 3 Ingredient Coffee Milkshake. It’s definitely as good as it looks. I think I have another future recipe developer on my hands :). And don’t forget: Milkshakes can be healthy! They contain milk which is high in protein and our bones need it so enjoy!
