Three Ingredient Blueberry-Banana Ice

This Blueberry-Banana Ice is one of those recipes that is almost too basic (and good) to be true. Simple is sometimes better. Recipes with only three ingredients can be as fabulous and flavorful as if it had more. Who needs all of the fuss?

To prepare this recipe, purchase ripe bananas and in season blueberries and freeze them (I used zip-top plastic bags). Place these ingredients in the food processor or blender with a touch of honey. It’s that easy. Feel free to experiment with other berries if you wish. This is the perfect healthy dessert for summertime. It’s healthy, great for your immune system and all natural. It   truly hits the spot.

Blueberry Spritzer

This Blueberry Spritzer recipe is a refreshing summer mocktail, just in time for Memorial Day weekend. If you’ve been following me and my recipes, you know I like easy. This yummy beverage is only three ingredients. Kids and and adults love it!

If you’re one of the lucky people heading to the beach or lake this weekend, put these ingredients on our grocery list now. If you’re like me and staying home, this recipe will hopefully will make you feel better. My Blueberry Spritzer uses Pomegranate Blueberry Juice, which is 100% juice with no added sugar. If you want to turn this recipe into a cocktail, add desired amount of vodka (be careful here).

Blueberries are a nutritional powerhouse. Tufts University conducted a study of 60 various fruits and vegetables and found that blueberries rated the highest for their antioxidant capabilities. Blueberries have been linked to so many health benefits. Areas of blueberries with blueberries show that they also may assist with improving brain health, cardiovascular health, aging  eyesight and more. One cup of blueberries has four essential nutrients, including fiber, vitamin C, vitamin K and manganese.

When purchasing blueberries, look for smooth, plump berries that are a deep purple or blue-black color. Refrigerate them as soon as you get home and wash before using. Most blueberries will last 7-10 days. If you want to grow your own, spring or fall is usually the best time to do this. Choose a sunny, well-drained location. Raised beds and containers work well if you don’t have good soil. Frozen blueberries are awesome too. Just defrost before using, unless you are adding them to a smoothie or smoothie bowl recipe.

Easy Strawberry Cobbler

I began planning a Memorial Day weekend menu today, and this recipe for Easy Strawberry Cobbler is on my list. Now that strawberries are in season, it is the ideal time to prepare this warm, succulent cobbler. This recipe is extremely simple, with only fifteen minutes of preparation time. The most time-consuming part is slicing the strawberries.

A Southern dessert, a cobbler is usually prepared with a biscuit topping. For my recipe, I added oats to my topping mixture, which creates a slight crunch and nice texture. When my three kids tried this recipe they said, “Mom, this is the best thing you have ever made.”

Alison’s Chicken Pasta Salad

If you’re looking a great pasta salad with chicken recipe, look no further. The first time I made this pasta salad, I knew I wanted my name on it. Alison’s Chicken Pasta Recipe makes a great lunch or light dinner that can be ready for hungry kids or spontaneous guests. You may want to double the recipe because it goes so fast.

This is a recipe I developed for a recipe collection I worked on with Canolainfo.org. I like to grill extra chicken and use the leftovers to make this recipe. Serve it on a bed of mixed greens or as a light main course served with a nice glass of Pinot Grigio. It is a terrific recipe to take on a picnic or make at the lake or the beach. Easy and Healthy Lentil Soup

Lentil Soup is so hearty, flavorful and healthy that I wonder why I don’t make it more often. This Easy and Healthy Lentil Soup is one my favorite lentil soup recipes. Hopefully, you have most of these ingredients already at home.

Lentils are filled with protein and fiber as well as iron, minerals and B vitamins. One-half cup of cooked lentils has:

Sodium: 5 milligrams

Protein: 12 grams

Lentils come in three main varieties: brown, green and red. Most grocery stores carry brown lentils, usually dried. Green and red lentils may be found at specialty food markets. Unlike other legumes, lentils cook quickly without pre-soaking. Just make sure to rinse away any dirt, dust or debris before adding them to recipes.

Tuna Checkerboard Sandwiches

With kids at home right now, I wanted to share a twist on the basic tuna sandwich. Make it fun by mixing and matching different types of bread to jazz up the kids’ sandwiches. These Tuna Checkerboard Sandwiches are my healthier version using fresh lemon juice and white wine vinegar instead of mayonnaise. I also add freshly chopped basil or dill to mine if you have that at home or in your garden. This recipe is light, flavorful and a great new way to get the kids to eat more tuna. Blueberry-Pecan Crisp

The blueberries this summer are so sweet and juicy, and I’m thrilled that they aren’t expensive either. The other day, I decided to make a simple Blueberry Crisp from a recipe my friends, Nancy and Lissa, sent me. When I put the photo on Facebook, everyone was begging for the recipe. Croque Monsieur Grilled Cheese Sandwich

Yay to April and National Grilled Cheese Month! I thought I would feature one of my favorite grilled cheese recipes, Croque Monsieur, from my latest cookbook “400 Best Sandwiches: from Classics & Burgers to Wraps and Condiments”. This French-style ham and cheese sandwich typically has Gruyere or Emmenthal cheese. It originated in France as a fast food snack in cafes and bars. Homemade Kale Chips

Last week I was talking about making kale chips on twitter, and so many people asked me about it, so I was excited to do a segment on NBC 13 Daytime Alabama showing how simple it is. I also talked about some of my favorite Power Foods, so tune in this Wednesday on NBC at 11:30 CST. My daughter, Leigh, can even make these on her own, so I promise that it’s a breeze. They are as healthy as they are delicious, and they work great as an appetizer or side dish.
