My kids have missed 2 days of school this week due to “inclement weather”, and it has not snowed yet (it’s supposed to be coming as we speak). Tonight we’re having this Easy Baked Ziti recipe that is warm, comforting and delicious! Blueberry-Pecan Crisp

The blueberries this summer are so sweet and juicy, and I’m thrilled that they aren’t expensive either. The other day, I decided to make a simple Blueberry Crisp from a recipe my friends, Nancy and Lissa, sent me. When I put the photo on Facebook, everyone was begging for the recipe. It’s terrific served on its own or with a scoop of low-fat yogurt or ice cream. Happy July 4th week everyone! Enjoy and be safe!

Croque Monsieur Grilled Cheese Sandwich

Yay to April and National Grilled Cheese Month! I thought I would feature one of my favorite grilled cheese recipes, Croque Monsieur, from my latest cookbook “400 Best Sandwiches: from Classics & Burgers to Wraps and Condiments”. This French-style ham and cheese sandwich typically has Gruyere or Emmenthal cheese. It originated in France as a fast food snack in cafes and bars. It’s so easy to prepare, and it’s the ideal comfort food. Be sure to check out my lightened up variation as well.

Homemade Kale Chips

Last week I was talking about making kale chips on twitter, and so many people asked me about it, so I was excited to do a segment on NBC 13 Daytime Alabama showing how simple it is. I also talked about some of my favorite Power Foods, so tune in this Wednesday on NBC at 11:30 CST. My daughter, Leigh, can even make these on her own, so I promise that it’s a breeze. They are as healthy as they are delicious, and they work great as an appetizer or side dish.

Chia Seed Banana-Nut Muffins

Have you heard of Chia Seeds? If you haven’t, read on. These wonderful seeds are on my list of top super foods of 2012. Chia seeds have more calcium and fiber than flaxseed, and they are loaded with omega-3 fatty acids, vitamins and minerals. They are also said to boost energy levels. They have a nutlike flavor, and they add flavor and crunch to baked goods, oatmeal, cereal, salads and in yogurt. Try them in this recipe for Chia Banana-Nut Muffins. It’s so easy, with no mixer needed. I made these on sunday, and before I could turn around, all of them were gone. My kids went wild over these. Feel free to use mini muffin pans for variety. If you use mini pans, bake them at 350F for 13 to 15 minutes or until lightly browned. Enjoy, and check out this powerful seed.

Quinoa Salad with Almonds, Cranberries and Mint

Quinoa is one of my favorite Super Foods of 2012. I talked a great deal about quinoa this weekend at my nutrition/healthy eating seminar including how to pronounce it, purchase it and cook it. I had a lot of wonderful questions regarding this gluten-free grain. One serving of quinoa provides all 8 essential amino acids, and it is high in protein and fiber. It’s also a wonderful grain for those on a gluten-free diet, and it works wonderful for breakfast, a side, in soups and salads. I recommend buying the rinsed version to make your life even easier. I developed this recipe for Quinoa Salad with Almonds, Cranberries and Mint for Thanksgiving for Honeysuckle White and Shady Brook Farms Turkey. It makes a great side dish or salad, and my kids absolutely loved it. Add grilled chicken or shrimp if you wish for a main dish salad.

Healthy Soup Recipes & 6th Annual Acoustic Soup Event

I have been on a soup kick this month, and I am so excited to judge this year’s Acoustic Soup in Birmingham, Alabama at Workplay on January 26th. This event will feature soup from talented Birmingham chef’s and restaurants benefitting VSA Alabama, which serves children and adults with chronic disabilities through the arts. Please come and bring your families for great food and a wonderful cause. Start the Day Off Healthy: Oatmeal with Egg Whites

It’s a busy week ahead for me including with radio show on Magic 96.5 this Wednesday as well as a nutrition seminar this weekend at Bikram Yoga Birmingham. For both events I’ll be talking about “Healthy Eating Tips” to get your new year off to the right start. One of my top tips is to never skip breakfast. If you like oatmeal for breakfast, you’ll love this recipe for Oatmeal with Egg Whites. This simple combination is something my friend, Kelly, of Hulsey Gardens, told me she eats daily. I made mine with a touch of brown sugar and blueberries. Kelly normally adds 1 tablespoon of pureed pumpkin, 1 teaspoon of pumpkin pie spice and 1 teaspoon vanilla to hers. Adding sliced strawberries and ground cinnamon is also delicious. Regardless, this is one healthy breakfast recipe that has the perfect mix of protein, fiber and carbohydrates, and it is a great way to start your day and new year on the right foot.

BCS Football Championship Recipe: Spinach Dip with Greek Yogurt

Roll Tide! I can’t believe an Alabama team is (once again) in the BCS National Championship. You have no idea what it’s like to live in this crazy, passion-filled football state (Alabama and Auburn) where red jeans and houndstooth are at a premium. I have had many, many requests, phone calls and emails for appetizer recipes. Since everyone is trying to get their new years off right, I thought I would share this Spinach Dip with Greek Yogurt recipe which I recently made this on television for NBC 13 “Daytime Alabama”.
