I hope everyone had a fabulous Thanksgiving holiday! I did! I completed a huge amount of holiday shopping (I am so thrilled, and we had amazing family time!) Now it’s time to get back to the grind and think about work and kids (and more holiday organization). I made this recipe today for Expresso Fudge form the Cooking Channel Stars and mixology duo, Alie Ward & Georgia Hardstark. I will be making this homemade fudge recipe for teacher gifts and holiday get-togethers. This recipe is made with NESCAFÉ Dolce Gusto Espresso Intenso pods which adds to it’s great coffee flavor.

Coffee Cake with a Twist: Apricot and Almond Coffee Cake

Coffeecakes have always been one of my favorite baked items. Serving and eating a piece with a cup of coffee or tea always make me feel warm and comforted. A friend recently shared a version of this recipe for Almond-Apricot Coffee Cake with me from the “Cooking with Paula Dean” magazine. I lightened it up a bit substituting egg white for some of the eggs, used reduced-fat cream cheese instead of regular and nonfat Greek yogurt for the sour cream. Apricots and almonds are two special ingredients to twist this recipe a bit, and they make this coffee cake even better. This is a great breakfast treat to serve to the kids, special snack, brunch recipe, bridal or baby shower recipe and, of course, dessert recipe.

For Breakfast or Dessert: Lightened-Up Coffee Cake

There’s nothing better than a slice of Coffee Cake in the morning or even for dessert after a light meal. I have been searching for a really great recipe that is “lighter”. I used nonfat Greek yogurt and light sour cream and a topping made with chopped pecans, cinnamon and nutmeg. My kids as well as my parents loved this, and honestly, I could not stop eating it either. This would be great to serve for “break the fast” for those celebrating “Yom Kippur” this weekend.

Easy Honey Cake Recipe for Jewish New Year (Rosh Hashanah)

Honey Cake is traditional to the Jewish New Year, Rosh Hashanah because of its sweetness. The tradition on this holiday is that you are supposed to eat something sweet to start off the new year right. Honey Cake is also really popular because it’s a true taste of fall. I love this particular recipe because it is so moist, and it really doesn’t have a lot of oil or fat in the recipe (many Honey Cake recipes do). It has a wonderful hint of strongly brewed coffee, apple cider and lemon zest, adding terrific flavors. I also love that you can make this recipe ahead of time as the flavors get stronger everyday. This recipe is adapted from the wonderful cookbook “Adventures in Jewish Cooking” by Jeffrey Nathan. It is truly a great cookbook!
