Grilled Guacomento

Grilled Guacomento

Since it’s National Grilled Cheese Day today and April is National Grilled Cheese Month, I wanted to celebrate with you by sharing my Grilled Guacomento sandwich recipe from my second cookbook 150 Best Grilled Cheese Sandwiches. This creative grilled cheese recipe combines two of my all-time favorites: guacamole and pimiento cheese. Some of you might think this sounds a bit odd, but trust me. Avocado (and guacamole) enhances just about about any food dish, including this fantastic sandwich. Enjoy this recipe all spring or summer (it’s also a fun recipe for Cinco De Mayo too). My cookbook as 149 other amazing recipes, so if you’re interested in ordering a copy click here.

Taquito Layered Dip: Cinco De Mayo

Taquito Layered Dip

Happy May and Cinco De Mayo! I am finally back from Italy, and now is the time to spice it up for summer entertaining just in time for Mother’s Day, Memorial Day, graduation, lake and beach parties. I made this Taquito Layered Dip today when I was having some friends over, and I saved a ton of time by using Chicken Taquito’s by Jose Ole. Feel free to use the chicken or steak varieties, and add your favorite southwestern toppings such as black olives, cilantro, avocado or jalapeños. You can also make your life simpler (and sometimes save money) using frozen foods to create fabulous appetizers, main dishes and even desserts. There are a huge variety of different cuisines represented in the freezer aisle, including options that cover snack-time, breakfast, lunch, dinner, entertaining and specialty food occasions. If you like southwestern food, the options of frozen food choices are endless. For more recipes such as these using frozen foods see Easy Home Meals.

Tofu Tacos for Cinco De Mayo

Tofu Taco

I am thinking about making a vegetarian for Cinco deMayo on Monday (or maybe the Kentucky Derby tomorrow). These Tofu Tacos are perfect for Cinco De Mayo. I made these for my 3 kids, and they fell in love with tofu. This recipe is so easy, fast and healthy! I used House Foods Tofu which offers both Premium & Organic products in five consistencies.   All products are made exclusively with 100% US grown soybeans and are Non-GMO Product Verified, certified gluten-free and Kosher.  Not only is House Foods’ tofu low in fat and high in protein, it also has the ability to soak up any flavor and add body and texture to a dish. Happy Friday everyone and have a great weekend!

National Margarita Day: The Partida Margarita

Guess what today is?  National Margarita Day! While not an official holiday, Barman “Willie” deserves a drink in his honor after creating the first official Margarita around 1934 in Mexico City. This is as good as any reason to enjoy this Partida Margarita cocktail. This recipe is super, using the world’s top-rated tequila, It also has fewer calories than traditional margaritas. Tequila Partida is actually made from 100% blue agave in the heart of Mexico’s historic Tequila region. Check it out.  Happy Margarita Day!

Frozen Pomarita (Pomegranate Margarita) for Cinco De Mayo

We are huge fans of pomegranate juice at my house. I like to put a splash in my water bottles, but the kids will drink it by itself. This recipe for Frozen Pomarita is perfect for Cinco De Mayo, or anytime this summer, when you want a cool, frozen cocktail beverage. I love that pomegranate juice has so many wonderful antioxidants and healthy properties helping prevent cardiovascular disease, prostate cancers, erectile disfunction, sports recovery problems and more. For more information and studies, see Pom Wonderful and check out their new lite flavors, such as blackberry lychee green tea, and Peach passion with up to 50% fewer calories.

Easy and Light Cinco De Mayo Appetizer: Southwestern Spinach Dip

IMG_1740

I’ve had several requests for spinach dip recipes, and this Southwestern Spinach Dip is one with a twist just in time for Cinco De Mayo. Use Pepper Jack cheese, green chiles and fresh tomatoes to flavor this wonderful appetizer. Just beware! It’s very addictive so purchase plenty of chips. Happy Cinco De Mayo!

Celebrate Cinco De Mayo with Pomegranate Margaritas

I featured this awesome Pomegranate Recipe when my blog was brand new back in November right before Thanksgiving. Since Cinco De Mayo is around the corner, I thought I would share it one more time. Adding pomegranate juice adds great depth of flavor to this simple beverage. It is perfect to serve this time of year as the weather has warmed up here in the south, and spring is upon us. I used Patron Silver for the tequila, as it’s one of my favorites. Look for me on Sunday at 7:35 a.m central time on Fox 6 News in Birmingham, Alabama

Great, Simple Guacamole for Cinco De Mayo

img_1545

Guacamole is so easy to make, but I have many friends and college student blog fans always asking me for an easy really good guacamole recipe. This one works great and is just in time for Cinco De Mayo next week. In 15 minutes, you will have wonderful, fresh guacamole. Serve with your favorite tortilla chips. I love the new multigrain tortilla chips with flaxseeds and sea salt made by Garden of Eatin’.
