Chipotle-Spiced Pork: 5 Ingredients, 10 Minutes

Friends have been asking me what they can make for dinner since they often get in a rut and need new ideas. I know they want recipes that are simple, light and tasty. I love using thinly sliced pork loin chops often because they cook so quickly and are so versatile. This simple version of Chipotle-Spiced Pork has only 5 ingredients, and they are super flavorful (and pretty too)! If you’re making some for the kids, omit the chipotle, and add additional lemon pepper and a squeeze of lemon juice (unless they like spicy foods). Salmon with Warm Black Bean Salsa

When Whole Foods Market asked me if I would do one of my television cooking segments for NBC 13 “Daytime Alabama” on Alaskan Salmon, I said, “Yes, please.” We eat salmon at least once a week at my house. Salmon is called a “superfood” because it’s high in omega-3 fatty acids, a type of fat that seems to decrease the risk of heart disease. It’s also a prime source of protein and contains vitamins A and B. This salsa works great with the dish featuring “I Can’t Believe It’s Not Butter Spray”. Serve the salsa warm or at room temperature.

Low Calorie, Low-Fat: Quick and Easy Chipotle Chili

My boys love chili, and we make it often at my house, especially this time of year. With only 248 calories and 4.8 grams of fat, this chili is low in fat and calories. I developed this recipe for Laura’s Lean Beef, but the original recipe has black beans instead of kidney beans and no chipotle seasoning. Both versions are wonderful. If you are really short on time and only have about 10 minutes, I love the Publix seasoning packet. Just add beef, tomatoes and beans, and it comes out great.

Talk of the Town Nashville: Chocolate Chipotle Cookies

Yesterday I has the awesome opportunity once again to be on “Talk of the Town Newschannel 5 in Nashville making this recipe for Chocolate Chipotle Cookies. I developed this recipe for Wisconsin Milk and Marketing Board and http://butterisbest.com working on a “regional holiday cookie” recipe project. This recipe represented the Southwest with the chipotle chocolate twist. Everyone at the station went wild over these cookies. They are wonderful for Christmas gifts or for a holiday cookie swap .
