I admit it. I have been MIA! Life got a little crazy buying and moving into a new house, but I am back! We are iced in today, so my kids and I made this Spiced Chocolate Covered Fruit recipe. It’s so easy and only 3 ingredients! Dark chocolate is rich in flavonoids, which have heart-protecting properties and are rich in antioxidants.  The protective factors are only seen in dark chocolate that contained at least 60 percent (preferably 70 percent or more) cocoa. There’s nothing better than a healthy snack with only 3 ingredients!

Roll Tide! I can’t believe an Alabama team is (once again) in the BCS National Championship. You have no idea what it’s like to live in this crazy, passion-filled football state (Alabama and Auburn) where red jeans and houndstooth are at a premium. I have had many, many requests, phone calls and emails for appetizer recipes. Since everyone is trying to get their new years off right, I thought I would share this Spinach Dip with Greek Yogurt recipe which I recently made this on television for NBC 13 “Daytime Alabama”. New Year’s Eve Appetizer: Chicken-Chipotle Dip

If you’re looking for a super easy appetizer for New Year’s Eve, Super Bowl Party or just any occasion, I have one for you. This Chipotle Chicken Dip is one of my newest favorite lightened up appetizer recipes. Take a shortcut by using a rotisserie chicken and add light cream cheese, nonfat Greek yogurt, green chilies, chipotle seasoning. Serve it with your favorite whole grain crackers, pita chips or fresh vegetables, and you’ll have a crowd favorite.

Chipotle Vegetarian Chili Recipe

It’s the time of year when I like to make a lot of soups, and chili, of course. This Chipotle Vegetarian Chili recipe is one of my newest favorites filled with black beans, corn, fresh vegetables, and chipotle peppers. I used the canned chipotle peppers, and they are great. Just don’t go overboard and add too many. You can always add more, so start with one or two and a little bit of the sauce. The peppers and a little beer add a wonderful spicy and smokiness to this chili, but this recipe is still very healthy and low in fat. It’s perfect for an easy weeknight dinner or for casual entertaining.

Chipotle-Spiced Pork: 5 Ingredients, 10 Minutes

Friends have been asking me what they can make for dinner since they often get in a rut and need new ideas. I know they want recipes that are simple, light and tasty. I love using thinly sliced pork loin chops often because they cook so quickly and are so versatile. This simple version of Chipotle-Spiced Pork has only 5 ingredients, and they are super flavorful (and pretty too)! If you’re making some for the kids, omit the chipotle, and add additional lemon pepper and a squeeze of lemon juice (unless they like spicy foods). Gifts from the Kitchen: Maple-Chipotle Spiced Nuts

Since I’m teaching a cooking class next week -“Gifts from the Kitchen”, I thought I would share with you my recipe for Maple-Chipotle Spiced Nuts. There’s no oil or butter in this recipe. Just egg whites, some of my favorite seasonings and nuts. I love Priesters Pecans, especially this time of year. This makes a great Christmas gift but is wonderful anytime. Simple Baby Back Ribs

Birmingham Alabama is a great place for ribs. I always cook my baby back ribs on the grill, so when I was asked to create a recipe for wintertime and indoors, I was a little nervous. These Chipotle Baby Back Ribs came out great. The Baja Chipotle Marinade is awesome, and these ribs fell of the bone. These are so easy that anyone can make them.
