Easy Peach Pie: Summerfest

My daughter, Leigh, has been begging me to make a Peach Pie with her, so we used store-bought pie crusts to make this Easy Peach Pie. She even made this lattice crust for the pie by herself, and I was impressed what a great job she did. We are so fortunate to live in Alabama where we get to savor Chilton County Peaches. These are some of the best southern peaches you can buy, and and they have been sold and grown since 1976. I grew up eating these fabulous summer fruits, a true summer southern tradition. This Easy Peach Pie is as good as it is simple so enjoy while peaches are at their peak. Fresh Peach-Pecan Muffins

I have been on a huge peach kick lately with the juiciest, ripest peaches to choose from in Alabama. I made these Peach-Pecan Muffins this weekend for my kids, and they were quite popular. This recipe can be made with whole wheat or all-purpose flour, and I used medium fresh peaches. Our medium peaches are huge, so you may want to add more if yours aren’t that large (see my picture below from instagram on the iphone). Also, feel free to omit the pecans if you wish, but they do make them pretty and add an additional touch of southern flavor.

Simple Summery Peach Pie

Living in Alabama does have its perks, especially living near easy access to fresh Chilton County Peaches. I have been visiting Durbin Farms since I was a child, and they still have the most unbelievable peaches. These peaches (below) were bigger than a softball, sweet, juicy and bursting with fresh peach flavor. A friend of mine passed me this recipe for Simple Peach Pie, and it really can’t get much easier than this. It’s fast with very few ingredients, and it was gone before I could turn around. When you have peaches this sweet, you don’t even need vanilla ice cream on the side, but it is a good addition :).

3 Ingredient Simple Peach Sorbet

My kids are infatuated with sorbet and ice cream, especially in the summertime. Since we had some awesome Chilton County peaches from Durbin Farms, I put them to great use in this 3 ingredient recipe for Simple Peach Sorbet from the Southern Living Classic Dessert Cookbook. It’s too easy and tastes fabulous. You can even make this year round using 1 (16-ounce) package of frozen sliced peaches.
