Kale Cherry and Berry Juice

Who is excited about Fourth of July tomorrow? It’s supposed to rain here, and I don’t have any big plans. I have been focusing on being extra healthy this week, so I just created this summer detox juice: Kale Cherry and Berry Juice. It’s super easy, and it tastes wonderful! Feel free to substitute other fruits that you may have in your refrigerator such as fresh pineapple, mint and any produce that you love. Try it after a morning workout or an afternoon snack. Even my kids loved it, so I figure I had a winner! Have a super holiday!!

Halloween Cupcakes

Every Halloween my daughter, Leigh, loves to have friends over to decorate cupcakes for Halloween. I purchase an array of baking supplies, and she and her friends scan the internet for inspiration. They always ask me what blogs are some of my favorites so I do have some influence with some of their selections. Here’s what we thought were some of the best Halloween Cupcakes we have come across lately. To start, our jaws dropped when we saw these¬†Black Chocolate Widow Rum Cupcakes from “6 Bittersweets”. Hope you’ll enjoy some of our ultimate favorites.

Banana-Dark Chocolate Chip Muffins (made with Greek yogurt)

I am so excited to share this recipe for Banana-Dark Chocolate Muffins. It’s a twist of my very popular banana bread recipe. What’s great about it besides the taste is that all of the ingredients can be combined in one bowl, and no mixer is needed. I use nonfat Greek yogurt which adds moisture and increases the protein. These muffins are amazing, and my kids went wild over them. I almost wasn’t able to take a picture of them before they ate them all. Enjoy these muffins for a wonderful breakfast treat, afternoon snack, lunch, or dinnertime dessert.
