My Favorite Chicken Tortilla Soup

It’s the perfect time of year for soup making so I’m thrilled to share my favorite Chicken Tortilla Soup recipe. This recipe is so easy! For preparation, all you need to do is chop the onion, a rotisserie chicken, a tomato, cilantro and an adobo pepper. Then, mix, stir and serve. I love serving this soup with fresh avocado, tortilla chips and a squeeze of fresh lime juice. I often also dollop each bowl with a tablespoon of light sour cream or nonfat plain Greek yogurt. Serve with a salad for a healthy, light, gluten-free and low-calorie dinner!

Tips:

•If you have not purchased chipotle in adobo sauce before, you can find the cans in the international foods section where Mexican foods are. Chipotles are very spicy so start with just one chopped and add as needed for taste.

•If you have leftover grilled, roasted or baked chicken, feel free to use this instead of a rotisserie chicken.

•Double the recipe so you’ll have leftovers.

•Prepare the soup ahead of time leaving out the cilantro and lime juice. When reheating, add these ingredients right before heating and serving.

My husband, Doug, is an amazing cook and surprises me with his multiple talents every single day. Last night he made this Chicken Sausage Kale Stew, which he has been making for several years for his parents. This soup is one of his dad’s favorites. As soon as there’s a nip in the air and the weather gets cold, his dad is asking for this stew for dinner. Doug adapted this recipe from Men’s Health Magazine, changing a few things such as grilling the sausage (although you can also brown it in the pan), substituting smoked sausage instead of andouille and adding 2 cans of cannellini beans instead of one. This soup is comforting, hearty and so flavorful. Serve with some crackers or rolls, and dinner is done. This has become our favorite winter stew too!

My sister, Julie, makes the best tortilla soup I have ever tried. I finally asked her for the recipe which actually came from The Food Network Kitchens. I adapted their recipe to create this Healthy Tortilla Soup. This recipe is so easy and only takes 10 minutes of preparation time. I used a rotisserie chicken for the chicken in this recipe which made this soup even simpler. Feel free to use fresh tomatoes and fresh corn if you’re making this in the summertime, but canned tomatoes and frozen corn are won’t compromise the flavor. My 3 kids loved this recipe, and it’s going on our Super Bowl recipe menu for sure! Enjoy this 30 minute recipe all winter and year round.

Simple Southwestern Tortilla Soup


It has been so cold in Alabama the past 2 months, so my family has been living on soup galore. It has finally warmed up thank goodness, but this Southwestern Soup is one of my kid’s favorites. My friend, Nancy, worked hard helping me to perfect the recipe. Many thanks to a wonderful friend. I used rotisserie chicken which saves a lot of time and effort. I love the touch of the homemade tortilla strips. I make this soup even in the summertime, but it’s always fabulous to serve this time of year.

Heartwarming Comfort Food: Matzoh Ball Soup

I have been sick for the past few days which is rare for me. My sweet friend, Heidi, offered to make me some Matzoh Ball Soup. Of course, I turned her down, but made every effort to make it on my own (with tons of help from my daughter, thank you Leigh). It’s three days later, and it still tastes great. It’s perfect for the cold weather we’re having and warms the soul. If you’re short on time, use the Manischewitz Matzo Ball and Soup Mix and add the vegetables above. It’s really great too.
