I know I say it often, but my daughter, Leigh, is an amazing girl. No new task is too much of a challenge for her, and she is becoming quite the cook and baker. She recently found this recipe for Turtle Cookies on Pinterest from the Pixelated Crumb, and she had to make them. I admit that I helped her a bit, but these came out incredible. She said, “These taste like a chocolate lava cake” while they were warm, and she was correct. The caramel makes this cookie even better. OMG! One of my subscribers from Florida, Melanie, asked me to make these delicious treats and put them up on my blog. I wasn’t familiar with this recipe or idea, but some people are. If you haven’t ever seen this, you will love it. They are only 3 ingredients, and everyone loves them. I taught a private cooking lesson today for an amazing and adorable second grader, and she even said, “What a great party idea!”
With just 4 ingredients and about 20 minutes, you can prepare these homemade candies for your favorite Valentine. These are so easy and fabulous! Be sure to butter the pans good to prevent sticking and use wax paper after the candy has been dipped in chocolate. Yield: 24 candies
1 (14-ounce) package caramels, unwrapped
2 tablespoons skim milk
2 cups chopped pecans
1 cup semisweet chocolate
1. Combine caramels and milk in a heavy saucepan; cook mixture over low heat, stirring constantly, until smooth. Stir in pecans, and drip by tablespoonfuls onto buttered baking sheets. Let stand until firm.
2. Microwave chocolate in a microwave-safe bowl at HIGH 1 minute or until melted, stirring once.
3. Dip caramel candies into melted chocolate, allowing excess to drip; place on wax paper. let stand until firm.
