I love using boneless pork loin chops because they cook quickly, are low in calories and fat, and pair with a myriad of flavors, toppings and accompaniments. In this recipe, I used oven-ready noodles so no boiling is needed. Make sure to break them into pieces so when you layer the lasagna, they are close together but do not have to touch. My son, Zachary said this is one of his favorite lasagna recipes.

There are several ways to cook this recipe. Personally, I love to cook on the outdoor grill, but you can also cook indoors in your oven. Feel free to substitute any of your favorite vegetables or herbs and to sprinkle a tablespoon of shredded Parmesan or crumbled feta cheese over the top to make this recipe your own.

Chicken Caprese: Spring is in the Air

Spring is around the corner, so it’s time for my favorite ingredients: tomatoes, basil and fresh mozzarella. This recipe for Chicken Caprese is a 30 minute twist on your typical “Caprese” salad. Feel free to sauté the chicken if you don’t have time to grill (or if it’s still to chilly outside). My 3 kids really loved this one! My youngest son, Zachary, loves fresh mozzarella, and it’s a a great way to get him to eat fresh tomatoes and basil.  My best tip is to buy the highest quality mozzarella you can find. Enjoy this during spring and summer as a simple weeknight or weekend chicken main dish.

Caprese Grilled Cheese

When I was asked to come up with a unique grilled cheese recipe for the Wisconsin Milk and Marketing Board and their “Grilled Cheese Academy“, I thought, why not take my spring favorite salad and make it a grilled cheese. Caprese Grilled Cheese is the simple combination of tomatoes, mozzarella, basil, balsamic vinegar and olive oil. I added avocado to mine. Feel free to use your favorite bread and any other ingredients you like.
