Grilled Salmon Burgers with a Twist

For Father’s Day this year, I am thinking about making these Grilled Salmon Burgers which is my MOST favorite new burger recipe. They are amazing, healthy and so easy! The most difficult part is taking the salmon off the skin, but here is how:

Place the fillet, skin-side down, on a chopping board. Coat the tail end in salt to give you a good grip and stop it from slipping. Holding from the tail end firmly use a sharp knife to make a cut between the flesh and skin in the opposite direction from the tail end. Holding the end tightly, continue to cut along the length of the fillet, making sure not to cut through the skin; remove and discard the skin.  

Once you have the skin off, place the salmon in a food processor and make into patties. Make sure you follow my directions and allow them to set in the refrigerator for at least 2 hours. They are taste terrific served with my wasabi mayonnaise mixture made with Greek yogurt, low-fat mayonnaise and low-sodium soy sauce, but you can also serve these with tartar sauce or cocktail sauce. These were also great made a day ahead and reheated so enjoy!

If you like mushrooms and burgers, read on. The Seasons 52 Restaurant and Mushroom Council have just introduced the Signature Beef and Mushroom Burger (Signature Burger), which is Angus beef blended with mushroom duxelle, butter lettuce, roasted tomatoes, house made pickles. This mouthwatering burger is new to their summer menu, and it’s made from 100% Angus beef and blended with mushroom duxelle (finely diced, sautéed mushrooms). I love finely chopping mushrooms so that they’re the consistency of ground meat, and then combining the two and using them together to create new recipes that are nutritious (this is also a great way to get your kids eating mushrooms). Mushrooms are so versatile and can be used in so many ways, while bringing flavor and nutrition your meals.  They’re naturally low in calories, fat-free and cholesterol-free and provide important nutrients like vitamin D, B vitamins, antioxidants and potassium. I took my two boys to Season 52 for the first time, and they LOVED it! We almost fought over this burger when we tasted it. Now the question is: How soon can we go back?

 

Chicken Veggie Burgers

Since February was American Heart Month and March is National Nutrition Month, I wanted to share another healthy, and delicious recipe. My kids love these Chicken Veggie Burgers from Chef Anthony Stewart from the Pritikin Longevity Center + Spa in Miami, Florida. They have hidden vegetbales in them including onion, carrot, celery and a hint of jalapeno. Serve them on pita bread with slaw or on a bed of  slaw or mixed greens on a weekend or weeknight.

Salmon Burgers with Greek Yogurt

Now that Thanksgiving is over, and Christmas is on our heels, it’s tough to stay on track. I have been trying to come up with what’s for dinner as I multi task work, the kids, and extra holiday related tasks. These Salmon Burgers with Greek Yogurt are always worth preparing, and my 3 kids always love them. Feel free to serve on a bun or just on a bed of greens. Canned salmon is one of the most calcium-rich, non-dairy foods. One 3.5 ounce serving with the bones contains two thirds as much calcium as a cup of milk. For women and children especially, consuming plenty of calcium is important for building and maintaining strong bones and reducing the risk of bone fracture later in life. Alaska canned salmon provides high quality protein that is easy and safe to digest by people of all ages. In less than 30 minutes, you’ll have something super healthy for dinner for the entire family.

Turkey Burgers Featuring Belle Chevre Goat Cheese

I am so excited about sharing this favorite Burger recipe: Turkey Burgers with Belle Chevre, a recipe by Chef Marvin Woods, Emmy Award Winner Nominee, Cookbook Author, and one of the first chefs to join the “Obama’s Let’s Move Campaign”. Brie-Mushroom Burgers

For Memorial Day weekend, I want to share one of my favorite burgers: Brie-Mushroom Burger. The first time I made this, my kids were a little leery of the Brie and mushrooms. When they tried it, they were hooked. This is a great way to get your children to eat mushrooms and try new ingredients. If you’re grilling this weekend for adults, you will definitely enjoy this burger with a cold beer (or glass of red wine). Happy Memorial Day everyone!

Sunday Night Dinner: Mediterranean Burgers

Burger night is always a huge hit at my house because the kids love it whether I make regular cheeseburgers or more unique such as Mediterranean Burgers. These are wonderful with ground beef, ground turkey or even ground lamb. I like to serve them with Greek-style yogurt (my favorite is Fage) mixed with diced cucumbers, fresh herbs and a touch of lemon and garlic.

I used to not be a fan of ground turkey, but because all of the recipe development jobs I have received requesting recipes for ground turkey, I have grown to love it. Even my three children have grown to love ground turkey, especially this recipe with guacamole and turkey bacon (some of their favorite ingredients). This recipe is so easy and flavorful, and I hope you will try it too. I am still in Chicago at the International Housewares show, but I miss Alabama and love light comforting recipes such as this one.
