Everyone loves oatmeal at my house, so I thought I would make my life easier by making this Overnight Apple Pie Oatmeal. With only 5 minutes of preparation time, this tasty breakfast is a ready when you wake up in the morning (the kitchen smells amazing too). Feel free to use your favorite apples and add honey, nuts, flaxseed or dried fruit to top off your morning oatmeal, but it’s also so good on its own. I used my new slow cooker below, which is my favorite new culinary toy. It’s so cute, useful and inexpensive too!

Do you still have any leftover eggnog in your refrigerator? If you do, I have a great recipe for you: Overnight Eggnog French Toast. All of the preparation can be done the night beforehand. Let the bread cubes soak in the liquid mixture. The next day, take it out of the refrigerate and let stand 30 minutes. Sprinkle ground over the top and bake according to recipe below. If you’re all out of eggnog, you can substitute 4 cups of skim milk. It comes out tasting fabulous that way too! This makes a great brunch recipe, shower recipe or breakfast for a large group. It also tastes great for several days, so it makes wonderful leftovers too with a warm cup of coffee. My family loves this recipe, so let me know how you like it!

I had some leftover fresh Northwest Cherries and wanted to make something I don’t ordinarily make. I thought, cherry cinnamon rolls, let’s do it! I used frozen bread dough to simplify things, fresh cherries, and these came out incredible! My husband, who says he doesn’t like cherries (who doesn’t like cherries) loved these, and my kids said, “When are you making them again?” These Fresh Cherry Cinnamon Rolls are the perfect recipe for a summertime brunch or breakfast! My sister is making them for a wedding shower next week. Enjoy them while fresh cherries are at their peak!

I received so many bottles of wine for our couple’s shower and wedding that I decided to get creative in the kitchen. Since warmer weather is arriving, I created a sangria popsicle (I love sangrias) to create these Wine Sangria Popsicles. I used VOGA Italia white wine and organic peach juice. If you can’t find peach juice or fresh peaches yet to juice your own, feel free to substitute orange or white grape peach juice. These are so easy and perfect to serve at a spring or summer cocktail party, couple’s shower, Mother’s Day brunch or even a spring or summertime cookout or just hanging by the pool.

Kale Frittata Recipe

I love making Frittatas so I thought why not a Kale Frittata recipe? I added red bell pepper, leeks, Parmesan and feta and oh, it was fabulous! Add any of your favorite vegetables such as mushrooms, onion, tomato, or other greens such as collards or swiss chard. Kale, one of the top super-foods, is so healthy for you and inexpensive. This is a great way to use it up, using 31/2 cups of fresh kale. Serve with a side salad and you’ll have a great holiday brunch, lunch main course, or a “what’s for dinner “recipe. Enjoy!

Lightened Up Noodle Kugel with Greek Yogurt

Yom Kippur is the Jewish holiday known as “Day of Attonement” starting tonight at sundown until Wednesday night at sundown. It is known as the holiest day of the year where Jewish people fast for 25 hours as well as pray and repent for their sins from the past year. On Wednesday night families get together for a “break the fast” where a light meal its typically served with smoked salmon, bagel, egg dishes and noodle kugel. Every year my family begs me to make my noodle kugel recipe so this year, I changed things up a bit. I took one of my favorite noodle kugel recipes for Apricot Noodle Kugel, and I added fruit tidbits and golden raisins. I also used nonfat Greek yogurt instead of sour cream, reduced the butter and the eggs.

I am so lucky to be spending this year with my dad. I miss my mom so much, but I thrilled for the opportunity to have my 3 kids and I live in his beautiful home where we feel love and can give him love.
