I am a huge coffee cake fan, so I decide to try this Holiday Breakfast Cake recipe for my husband and the kids. This is a great recipe for Christmas morning, holiday gift, a brunch, a shower, dessert, or even a special snack to last all weekend. For dessert, you may want to add a simple icing, but it’s wonderful without it too! Serve at room temperature or warm beforehand. My favorite way to enjoy it is with a cup of coffee or for an afternoon snack.
If you read my blog on a regular basis, you can tell that we have been into making muffins lately at my house. Over the weekend my daughter, Leigh and I made these Healthy Banana Nut Muffins for the week for breakfast, lunches and afternoon snacks. We made regular size and mini muffins so the directions for the different baking times are below. These are really light and filled with flavor, and you won’t even believe they are whole wheat. No mixer is needed, so these are so easy and fun to make with the kids. If you make mini muffins, each muffin has 140 calories, 2.2 grams of fat, 26 grams of carbohydrates and 3.7 grams of protein per serving, so enjoy!
Who is ready for fall? I know that I am, and I was in the kitchen today working on some pumpkin recipes. I had some leftover pumpkin so I made these Mini Pumpkin Muffins with Greek Yogurt. These are so easy and require no mixer. They make a great on-the-go breakfast treat, after school snack, desert, or healthy addition to your lunchbox. I cut the butter in half and used nonfat Greek yogurt which adds protein, no fat and creates a moist center, so enjoy!

I had some leftover fresh Northwest Cherries and wanted to make something I don’t ordinarily make. I thought, cherry cinnamon rolls, let’s do it! I used frozen bread dough to simplify things, fresh cherries, and these came out incredible! My husband, who says he doesn’t like cherries (who doesn’t like cherries) loved these, and my kids said, “When are you making them again?” These Fresh Cherry Cinnamon Rolls are the perfect recipe for a summertime brunch or breakfast! My sister is making them for a wedding shower next week. Enjoy them while fresh cherries are at their peak!

You’ll find recipes for every occasion and every meal of the day. I love the Peach Cobbler, Mini Quinoa Croquettes, Singapore Summer Rolls, and these Vanilla Chai Power Bars. These energy bars are a great item to keep on hand for snacking on the go, or enjoy them as a quick breakfast with a cold glass of milk. Filled with millet, chia seeds and spices, these bars are too good! My kids went wild over these, and they are awesome for travel too. It has been an amazing healthy summer, and I have some BIG news! I am working on my third internationally published cookbook! YAY!!! This book is a “Healthy Recipe” topic which is still hush hush for now. This Easy Homemade Muesli recipe might be in one of the chapters. It’s filled with oats, seeds and your favorite dried fruits. My kids have been indulging on this cereal (having no clue how many healthy seeds are included). Enjoy for breakfast with milk or yogurt or just as a snack. Happy Monday, love all of you!
I have been working on a ton of recipe testing lately (all healthy) for a super exciting new project! My kids have said they have never seen so much great, healthy food from me. HAHA, I guess I’ll take that as a “new” compliment! The other day, I had so many overripe bananas, that I made their favorite healthy quick breads: No Mixer Banana Bread recipe. Yes, with nonfat plan Greek yogurt and this time with fanned sliced bananas over the top. I don’t think it even lasted a full day, but it was wonderful. My son said, “There really isn’t anything better but this banana bread and a glass of milk.” Enjoy this No Mixer Banana Bread anytime of the year for breakfast, a mid morning snack or as a dessert, of course. No mixer is needed so cleanup is a snap.
Yogurt and smoothie bowls are our favorite breakfast and after workout snacks so this weekend we created this 10 minute Watermelon Tropic Yogurt Bowl recipe with ingredients we had in our refrigerator and pantry.
