Layered smoothies take extra time, but they are so worth it! My family has been working out a ton this weekend (tennis tournament, hiking, swimming, running and golf) so we decided to make these Layered Berry Smoothie just in time for the Memorial Day holiday. The best way to make these, so the flavors don’t run into each other is to prepare each flavor at a time, and put each flavor in the freezer until ready to layer.

These layered smoothies are so healthy with fresh strawberries, blueberries and bananas. They are also easy to prepare, taste fresh, are filling and are good for you. Feel free to use your favorite milk, and if you can’t have dairy, feel free to substitute coconut water.

I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!

My daughter, Leigh, saw a recipe for Skinny Banana Chocolate Chip Muffins by Ambitious Kitchen on Pinterest and asked me to make them. I made them today, and I made a few minor changes. They turned out great! I love that they use liquid coconut oil and nonfat Greek yogurt and her idea to put the bananas and liquid ingredients in the blender. This recipe is super quick and easy. They make a great morning or afternoon snack or easy breakfast on-the-go. Thanks to Leigh for finding this one and to the wonderful recipes from Ambitious Kitchen!

My sister, Julie, called me this morning and raved about a granola bar recipe she tried from Giada’s cookbook, Giada’s Feel Good Food. I had all of the ingredients on hand so I tweaked the recipe slightly and made these Super Easy Healthy Granola Bars, which came out awesome! I used liquid coconut oil instead of the safflower oil, added additional oats and vanilla, used golden raisins and added a combination pecans and walnuts instead of just walnuts. These are a fabulous gluten free healthy breakfast or mid or afternoon snack recipe. Since my daughter does not get a lunch break at school, this is the ideal blend of protein, fiber, carbohydrates to help her energized though her day. These also make a great travel snack, so try them now and thank me later!

Do you still have any leftover eggnog in your refrigerator? If you do, I have a great recipe for you: Overnight Eggnog French Toast. All of the preparation can be done the night beforehand. Let the bread cubes soak in the liquid mixture. The next day, take it out of the refrigerate and let stand 30 minutes. Sprinkle ground over the top and bake according to recipe below. If you’re all out of eggnog, you can substitute 4 cups of skim milk. It comes out tasting fabulous that way too! This makes a great brunch recipe, shower recipe or breakfast for a large group. It also tastes great for several days, so it makes wonderful leftovers too with a warm cup of coffee. My family loves this recipe, so let me know how you like it!

These green juice Detox Shots are an amazingly healthy way to start off your day. I made this with my favorite healthy ingredients, and all you need is 5 minutes. Place the ingredients in a blender and process until smooth. If you want the mixture colder or thicker add ice and for added protein, add protein powder. You can drink this as a smoothie/green juice or serve as Detox shots which is a fun twist to get vitamins and minerals naturally. I have had one shot or glass since Sunday, and two friends asked me today why my skin was glowing and looks so even colored. I wonder if it has to do with drinking these, but regardless, I fell energized and not sluggish and I know I am doing something wonderful for my body!
