EASY PUMPKIN BREAD

Okay. This is the BEST Easy Pumpkin Bread I have ever had: Truly! So before you read on, I started with a mix. We were short on ingredients and times so since we now have Trader Joes in Birmingham, I bought their pumpkin bread mix because my niece, Carlie, has been raving about it. You know me. I played around with the box mix directions to my liking (and to make it healthier). I halved the oil and used only 1/4 cup and added 1 (6-ounce) container nonfat plain Greek yogurt (I used Fage). I also added 3/4 cup chopped pecans. The baking time on the box said 55 to 60 minutes. I only cooked mine about 45 minutes so be sure to insert a toothpick around 45 minutes in the center and see if it comes out clean. This is such a great recipe and mix, and my kids said that this is their favorite pumpkin bread. It’s great for breakfast, with coffee, dessert, for an after-school snack or even food gifts for the holidays.

Blueberry Yogurt Parfait: Gluten Free

I get a lot of requests for gluten-free breakfast recipes, so how about this Blueberry Yogurt Parfait? Serve this gluten-free and high protein recipe for breakfast or an afternoon snack.  It also makes a wonderful, light dessert that my three kids like too. With only 3 ingredients, how can you possibly go wrong? Blueberries are so good for you. Here’s just a few of the wonderful health benefits of eating blueberries and adding them to your diet:

1. Blueberries are full of  Vitamin C-In just one serving, you can get 14 mg of Vitamin C which is almost 25 percent of your daily requirement. Vitamin C aids in the formation of collagen, helps maintain healthy gums and capillaries, and promotes a healthy immune system.

2. Blueberries are full of fiber-A handful of blueberries meets your daily fiber instate which is terrific for heart health and lower cholesterol levels.

3. Blueberries are high in antioxidants-Antioxidants help to neutralize free radicals linked to the development of cancer and Alzheimer’s. Blueberries contain polyphenols which have high antioxidant properties.

4. Blueberries can help protect against urinary track infections-Blueberries, like cranberries, contain flavonoides. Flavonoids can help protect bacteria that causes urinary tract infections from binding to the lining of the bladder.

Start the Day Off Healthy: Oatmeal with Egg Whites

It’s a busy week ahead for me including with radio show on Magic 96.5 this Wednesday as well as a nutrition seminar this weekend at Bikram Yoga Birmingham. For both events I’ll be talking about “Healthy Eating Tips” to get your new year off to the right start. One of my top tips is to never skip breakfast. If you like oatmeal for breakfast, you’ll love this recipe for Oatmeal with Egg Whites. This simple combination is something my friend, Kelly, of Hulsey Gardens, told me she eats daily. I made mine with a touch of brown sugar and blueberries. Kelly normally adds 1 tablespoon of pureed pumpkin, 1 teaspoon of pumpkin pie spice and 1 teaspoon vanilla to hers. Adding sliced strawberries and ground cinnamon is also delicious. Regardless, this is one healthy breakfast recipe that has the perfect mix of protein, fiber and carbohydrates, and it is a great way to start your day and new year on the right foot.

3 Ingredient Apple Tart

I love super easy recipes that have only a few ingredients but still taste like a million bucks. This 3 ingredient recipe for Apple Tart is as easy as can be. I used Puff Pastry, fresh apples, granulated sugar, and that was it. It’s so easy to prepare, and it’s perfect for dessert, brunch or even an afternoon snack (my kids devoured this after school).
