5 Mother’s Day Breakfast Recipes

I can’t believe Mother’s Day is this weekend. Last year was a rough, emotional mother’s day with my mom passing away the week before. It has been a tough year to say the least, but being a mom with 3 kids makes everything in life worth it. A good friend of mine tells me often to “Roll with the punches”. This is the best advice I can give to anyone, especially moms. Blueberry Muffins with Greek Yogurt

When my daughter, Leigh, was bored the other day, I said, “Let’s make some muffins”. We had an abundance of blueberries on hand and came up with this healthier version of Blueberry Muffins with Greek Yogurt. Leigh is 13 years old, and she made this entire recipe on her own. I photographed this picture, but I told her that she just may have a summer internship. Anyway, this is the first of several of her creations coming soon that she made under my (very little) direction. They do taste as good as they look. We started with a dozen, and the next morning there were only 3 left 🙂

Blueberry Muffins with Cinnamon-Crumb Topping

Last weekend, my kids went blueberry picking at Petals from the Past while I was in Park City at EVO. When I got off the plane (at almost midnight), I came home to a refrigerator full of fresh blackberries, blueberries and Chilton County peaches. I was so excited to have the freshness of summer at my fingertips after a long day of traveling. My daughter, Leigh, and I made blueberry muffins the next day and chose to make some with Greek yogurt (I love Fage) and a cinnamon crumb topping. Needless to say, 2 days later, they are all gone.
