Peppery and tangy, watercress is a storehouse of many natural phytonutrients that have health and disease prevention properties.   • Watercress is an abundant source of lutein and zeaxanthin, two carotenoids that are said to be beneficial for the eyes and the heart.

Super Easy Cobb Salad: Kid Friendly Recipe

Lately it has been such a struggle to figure out what to make the kids for dinner. I am always trying to come up with something new and different to please all three of my kids. I made this Easy Cobb Salad recipe last week, and it was quite the hit. I used chopped rotisserie chicken, but leftover grilled chicken, shrimp or steaks would also be a nice addition. Between my daughter’s dance practices three nights a week and my two boy’s basketball schedules, January and February has been nuts. This main dish salad is a great new recipe that all three of them agreed that they really liked. Prepare your own salad dressing using red wine vinegar, Dijon mustard and olive oil or use ranch or blue cheese. Have a great week ahead!

My Favorite Winter Salad: Radicchio Salad

Now that Thanksgiving is over, I want something light, healthy and flavorful. Radicchio Salad, with Walnuts and Pomegranates, is a wonderful combination of radicchio, romaine, arugula, apples, walnuts, pomegranate seeds and cranberries. Feel free to use whatever greens you have on hand, and be sure to mix them for color, flavor and texture. If you haven’t tried radicchio before, you should. It’s a red-leafed salad green that is slightly bitter. It can also be grilled or sauteed, but I love it in this salad. Add cooked turkey, chicken, pork or shrimp for a main dish salad.

Simple 5 Ingredient Creative Appetizer: Dirty Martini Cheese Ball

My martini of choice is a Chopin Vodka or Ketel One Dirty Martini slightly dirty with blue cheese-stuffed olives (Satterfields or Flemming’s make the best in Birmingham). This recipe reminds me a lot of my favorite cocktail, hence its name: Dirty Martini Cheese Ball. Even my son, Zachary, who loves blue cheese and olives, begs me to make this. It’s great for a party, and it’s so simple. Just mold it together, let it chill for about 4 hours and then roll in nuts. It’s a sure hit, so cheers!

Easy Salad with Strawberries, Mandarin Oranges and Pecans

For my college student cooking class last week, I wanted to offer a wonderful salad that was simple as well as delicious. Easy Salad with Strawberries, Mandarin Oranges and Pecans is ideal anytime of the year and takes only 20 minutes to prepare. Steak-Fresh Herb and Tomato Crostini Appetizer

Since summer is here, I like to cook appetizer recipes that are easy to prepare, delicious and perfect to serve while I’m grilling outside. This recipe works great using leftover steak, or if you want to serve a hearty appetizer, you can create this one on the grill while you are grilling the rest of your meal. I love the combination of sun-dried tomatoes and fresh plum tomatoes. If you don’t like blue cheese, use fresh Parmesan or feta cheese. I developed this recipe for Laura’s Lean Beef, and it would be perfect for the Fourth of July.

 

Main-Dish Salad: Shrimp Iceberg Wedge Salad

Iceberg wedge salads are so fresh, delicious and best of all, simple. This one is a low-fat main-dish salad topped with shrimp and turkey bacon. I developed a low-fat blue cheese dressing to go with it, but if you’re short on time, use a bottled blue cheese or even vinaigrette dressing instead. This recipe is so simple: 21 minutes and dinner’s on the table.

 

Shrimp Iceberg Wedge

If you’re short on time, cook turkey bacon in microwave on HIGH 21/2 to 3 minutes or until crispy.

Prep: 15 minutes

Cook: 6 minutes

Yield: 4 servings

Ingredients

1/2 cup light mayonnaise

3 tablespoons fresh lemon juice, divided

1/4 to 1/2 teaspoon bottled hot sauce

1/4 teaspoon freshly ground pepper, divided

2 to 3 tablespoons crumbled Blue cheese

1 pound large shrimp, peeled and deveined

1 large head iceberg lettuce, cut into 6 wedges, with core attached

2 slices turkey bacon, cooked and crumbled into pieces

1 cup chopped tomato

1/3 cup thinly sliced red onion

Pita wedges (optional)

Preparation

1. Combine mayonnaise, 1 tablespoon lemon juice, hot sauce and 1/8 teaspoon pepper in  a small bowl. Add blue cheese, stirring until well blended. Cover and refrigerate until ready to serve.

2. Preheat grill saute pan or grill pan to medium-high heat.

3. Drizzle shrimp with remaining 2 tablespoons lemon juice and remaining 1/8 teaspoon pepper. Place shrimp on grill rack or grill pan coated with cooking spray; grill 3 minutes on each side or until shrimp are done.

4. Arrange lettuce wedges on serving plates. Top with bacon, tomato, onion and shrimp. Spoon dressing evenly over each wedge.
