Tofu Tacos for Cinco De Mayo

Tofu Taco

I am thinking about making a vegetarian for Cinco deMayo on Monday (or maybe the Kentucky Derby tomorrow). These Tofu Tacos are perfect for Cinco De Mayo. I made these for my 3 kids, and they fell in love with tofu. This recipe is so easy, fast and healthy! I used House Foods Tofu which offers both Premium & Organic products in five consistencies.   All products are made exclusively with 100% US grown soybeans and are Non-GMO Product Verified, certified gluten-free and Kosher.  Not only is House Foods’ tofu low in fat and high in protein, it also has the ability to soak up any flavor and add body and texture to a dish. Happy Friday everyone and have a great weekend!

Chipotle Vegetarian Chili Recipe

It’s the time of year when I like to make a lot of soups, and chili, of course. This Chipotle Vegetarian Chili recipe is one of my newest favorites filled with black beans, corn, fresh vegetables, and chipotle peppers. I used the canned chipotle peppers, and they are great. Just don’t go overboard and add too many. You can always add more, so start with one or two and a little bit of the sauce. The peppers and a little beer add a wonderful spicy and smokiness to this chili, but this recipe is still very healthy and low in fat. It’s perfect for an easy weeknight dinner or for casual entertaining.

Salmon with Warm Black Bean Salsa

82460

When Whole Foods Market asked me if I would do one of my television cooking segments for NBC 13 “Daytime Alabama” on Alaskan Salmon, I said, “Yes, please.” We eat salmon at least once a week at my house. Salmon is called a “superfood” because it’s high in omega-3 fatty acids, a type of fat that seems to decrease the risk of heart disease. It’s also a prime source of protein and contains vitamins A and B. This salsa works great with the dish featuring “I Can’t Believe It’s Not Butter Spray”. Serve the salsa warm or at room temperature.

Watch my segment, Friday, July 9th at 11:30 central time.

Weeknight Summer Dinner in a Pinch: Steak Fajita Salad

Since summer began, things seem (and are) busier than ever. Trying to work at home with 3 kids is always a challenge. Some days, dinnertime becomes a last minute thought. This recipe for Steak Fajita Salad is one of my “in a pinch” recipes. My kids love these, and they wrap the steak and vegetables in flour tortillas. I serve mine over lettuce (trying to skip the carbs). I dollop mine with nonfat Greek yogurt for some extra protein and a great substitute for sour cream.

Note: for the Fajitas seasoning, I used McCormick.

Vegetarian Healthy Favorite: Cuban Black Beans and Rice

For all of those vegetarian friends and fans, here’s one for you. Cuban Black Beans and Rice is perfect as a main dish or even side dish. Black beans are extremely healthy, as they are a very good source of cholesterol-lowering fiber. They are also rich in antioxidants and may help to protect against cancer. This recipe is really easy to prepare and very filling. Feel free to substitute quinoa for the rice, if desired.

Magical Gluten-Free Side Dish: Southwestern Quinoa Salad

IMG_3685

A lot of people have asked me lately, “What is quinoa?”. I answer, “It’s the magical grain.” Quinoa is the amazing gluten-free grain that is high in fiber and a complete protein, meaning it has all nine amino acids. Quinoa also contains high amounts of  lysine, manganese, magnesium, iron, copper and phosphorus. It is a great replacement for rice or couscous and works great here in this simple recipe for Southwestern Quinoa Salad. Serve it room temperature or chilled. It’s awesome, and my kids even ate it too! By the way, quinoa can be found at Whole Foods Market or any of your specialty stores.
