No-Bake Dog Treats: For People Too

When Birmingham Magazine asked me for some dog treats for my monthly food column, I wasn’t sure what to do. Honestly, this is not my area of expertise. I contacted our wonderful veterinarian, Andy, and I asked him to name a couple of ingredients which I could use to develop a cookie that would be good for dogs. I created these No-Bake Dog Treats which are great for people too. These came out fabulous, and my dog, Latte, loved every one of them. Note: For overweight dogs, these should be a “splurge” snack.

Strawberry Cobbler

Cobblers are one of my all-time favorite desserts. When I was trying to decide on a recipe to feature for the February issue of the Birmingham Magazine, the first thing that came to mind was a warm succulent Strawberry Cobbler. I thought it would be different to add oats to the topping, making it lighter and healthier. The recipe worked perfectly on my first try during recipe testing (I love it when that happens). When my 3 kids said, “Mom, this is the best thing you have ever made.” I must admit, I agreed. Enjoy on Valentines, Mother’s Day or really anytime. It’s true comfort food, easy to prepare and so worth it.

Mini Valentines Treats: Cookie Dough Truffles

I read a lot of food blogs, and I mean a lot! Since I am a consultant for a few food magazines and PR firms, I get paid to keep my eye on talented bloggers to possibly feature, new ideas in recipes as well as food trends. Many times, I come across a blog which I subscribe to and look forward to every day. In December, I was so excited when Carrots and Chocolate featured several variations of truffle recipes for Christmas. The Cookie Dough Truffles caught my eye, and the next thing I knew I was in the kitchen tinkering with her recipe. Recently, I served my variation at a party, and my friend, Andy, said, “I didn’t think cookie dough could get any better!” I thought that was testimony enough. These are really fun to serve on Valentine’s Day, and I can’t wait to make them later this week in Nashville working with the talented crew from Newschannel 5 on “Talk of the Town”.

Brussels Sprouts-Tomato Salad

I love Brussels Sprouts this time of year, and I was so excited about a new way to serve them in this Brussels Sprouts-Tomato Salad. This recipe is perfect for Thanksgiving or your weeknight dinner, and it’s a cinch, flavorful and pretty. It was featured in the November issue of Birmingham Magazine and on NBC 13 “Daytime Alabama” this month so it’s quite the popular Brussels Sprouts recipe. I even got two out of three of my kids to try it, and honestly, they liked it a lot!
