Quinoa Recipe and Quinoa Cookbook Giveaway

If you love quinoa like I do, you will adore this Quinoa Cookbook (part of the Idiot’s Guide) by Susan Irby, The Bikini Chef. I was lucky enough to travel with Susan to Italy a few years ago. Susan is an energetic, talented woman, Author, Radio Show Host of Bikini Lifestyles on AM 790 KABC in Los Angeles and on PBS Televison. This cookbook has over 180 quinoa recipes from energizing breakfast options, lunch soups, salads and sandwiches, finger foods, snacks, appetizers, main dishes and even an array of desserts. Easter or Passover Main Dish Idea: Mahi Mahi and Vegetable Kabobs

I grill all year long, but my family especially loves it when the weather turns nice. We tend to eat outside on the deck, and it’s great for the kids to be riding bikes and playing basketball while I’m cooking the food on the grill. This is the epitome of family time. These Mahi Mahi and Vegetable Kabobs are the perfect recipe to try if you’re wanting to get your kids to like fish and vegetables. It’s colorful, fresh and full of clean flavors. Mahi Mahi is mild, a low calorie, low-fat source of protein, and it also has B-complex vitamins, selenium and omega-3 fatty acids. Serve these kabobs with grilled asparagus or squash and zucchini this Easter or Passover dinner for something different and unexpected. It’s a healthy low carbohydrate main dish.

Labor Day Recipe: Easy Beef-Vegetable Kabobs

Celebrate Labor Day with these Easy Beef-Vegetable Kabobs. We make kabobs almost every week. My kids absolutely love them, and so do I. They are so simple to prepare and basically a complete meal. I serve them with rice and/or a salad, and dinner is on the table. I developed this recipe for US Wellness Meats. The quality of their beef is fabulous, and I love that they have kabob meat so there’s no slicing involved. This is what I will be serving on Labor Day, and I hope you have a great holiday!

Super Easy 15 Minute Summer Cole Slaw

I’m cooking ribs and coleslaw for the 4th of July at my house today since I’m heading to the lake tomorrow. I wanted to make a really easy, but delicious, light coleslaw. I had a great idea that made my life oh so simple. Recently, I bought some new spices from Penzeys, (when I went to get a present for someone else-you know how that goes). I tried the “Country French Vinaigrette” dry spice mix which works great in this 15 Minute Summer Coleslaw. This recipe was a huge hit with everyone, including the kids.

Kid Approved: Balsamic Penne Pasta Salad

My daughter, Leigh, begged me to make penne pasta salad that she saw a friend bring to school. She called to find out what was in it, and she made up this recipe herself for Balsamic Pasta Salad. This recipe is a breeze, and the kids absolutely loved it. Feel free to add chicken or turkey and top with fresh basil and Parmesan cheese.

Family Favorite Low-Fat Casserole: Tuna Noodle Casserole

One of my subscribers asked me for a recipe for a Tuna Noodle Casserole, and, at first, I wasn’t so excited to come up with something. When I made this dish, I really had a change of heart. I used reduced-fat soups, panko breadcrumbs, canned tuna and some fresh and frozen vegetables, and it came out great. My kids love penne noodles, and they worked well with the consistency of this dish. This makes a great weeknight or Sunday night dinner offering perfect for the entire family.

Easy Vegetarian One Dish Meal: Vegetarian Paella

Thursday night I will be teaching a “Paella” cooking class preparing this dish: Vegetarian Paella. I will also be preparing Chicken Sun-dried Tomato Paella and Seafood Paella at Birmingham Bake and Cook in Inverness, Alabama at 6:30 p.m. Using a paella pan works great, but you can also use any large nonstick skillet. This paella recipe is really simple, fresh, economical and delicious. Feel free to add fish or chicken if you wish. This recipe has been adapted from the book“Paella Paella”.
