Heart Healthy: No Bake Blueberry Bars

What is your favorite no bake recipe? I have been obsessed with “no bake” recipes this summer, especially desserts. These No Bake Blueberry Bars are so easy to make. I saw this Strawberry Oat Bar recipe in a recent Whole Living Magazine, and I had to try them with blueberries. Both the strawberry and blueberry versions are so good! I used almonds instead of macadamia nuts, but any nut would work. Dates and nuts are so healthy for you. Dates are a sweet fruit that grows on palm trees and contain B vitamins, Vitamin C and fiber. They are a good source of energy and low in fat. Almonds are a great protein source, heart healthy and help with cholesterol.

My two boys just came back from being at camp for two weeks, and the first question I asked was, “Did you have s’mores”?  S’mores have been a summer favorite since I was a young child, and my most recent  S’mores Ice Cream Pie recipe was a hit with my kids and neighbors. I looked up the history of s’mores because we all have our childhood memory of enjoying them. Apparenly the history is somewhat unknown, but the first recipe was found in a publication of the Girl Scouts in 1927 by Loretta Scott Crew who made them at a campfire for the scouts. It is unknown when the name was shortened, but recipes for “Some Mores” are in various Girl Scout publications until at least 1973. I am amazed at all of the incredible ways to make S’mores.
