I am so excited it’s almost Thanksgiving! If you are in need of one more Thanksgiving side dish, try this recipe for Brussels Sprouts with Bacon. My husband has never has really liked Brussels Sprouts, but when I added bacon he changed his tune. I also added mushrooms to this, but the recipe is just as good without them. This recipe is  so easy to make (a total of 35 minutes), so you can slice them and have them ready to go right before Thanksgiving dinner. Brussels Sprouts are so healthy, high in Vitamin C, K, fiber and potassium. They pair perfectly with turkey or with pork, chicken or beef, so enjoy them this winter season.

Here are a few of my favorite grilled cheese tips:

1. Spread softened butter ont eh bread instead of adding it to the pan. This will keep the butter from burning.

2. Use grated, shredded or thinly sliced cheese for quicker melting.

3. Slice and grate the cheese when it’s cold for quicker melting.

4. The more cheese, the better the results.

5. Use your favorite bread and don’t slice it too thick (1/2-inch to 1-inch) is best.

6. Use your favorite toppings and combinations. Be creative and enjoy!

Are you in the hustle and bustle of the holidays already? I certainly am, but I love holiday entertaining! Trust me, entertaining this time of year can be fun and easy. I am very excited to share this recipe for Warm Kale Bacon Dip just in time for your holiday gatherings. It’s my family’s favorite appetizer as it uses a few of our most loved ingredients such as kale, Borden and Sargento cheeseDannon Oikos Greek Yogurt and Bays English Muffins. What I really love about this recipe is its simplicity by using high-quality brands of shredded cheeses along with healthy ingredients such as Greek yogurt and kale. Friends ask me all the time for my top stress-free cooking tip and I usually tell them to keep it simple. Use your favorite ingredients and stop by the dairy and/or freezer section to make your life even easier. You can find so many items in these sections of the grocery store, which make cooking more economical, convenient and your recipes taste even better.

For this dip recipe, start by roasting the kale with a touch of olive oil until it is slightly wilted and crispy. Then, add to the cheeses and yogurt, stirring well. Complete this by topping with crumbled bacon. If you’re not a bacon fan, you may omit this step. I used Bays English Muffins from the dairy section, which are a perfect accompaniment to this warm cheesy dip with their great texture and flavor.

Besides being tasty, this holiday appetizer is healthy too! It is filled with calcium, one of the body’s most important minerals for strong healthy bones, as well as active cultures in the Greek yogurt, which adds more protein to this appetizer while also aiding in digestion and boosting the immune system (we all need this during the cold winter months). Kale is another fabulous, healthy ingredient addition, known as a super-food with vitamins and minerals.

Brussels Sprouts with Bacon

It’s the time of the year when Brussels sprouts are at their peak, and my three kids and I really like them! As you know, Bacon makes anything taste  better, so these Brussels Sprouts with Bacon are at the top of our Brussels sprout side dish list. This recipe is a great side dish for Thanksgiving or Christmas holidays or anytime during the week. Brussels sprouts only have 28 calories in a 1/2 cup. They are a good source of fiber and low in carbohydrates (only 6 grams in 1/4 cup). Brussels sprouts provide you with 20 essential vitamins and minerals. A ½ cup serving provides 48 mg of vitamin C, and 604 IU of vitamin A, which supports healthy eyesight. Brussels sprouts provide more than a day’s worth of vitamin K for men, and 91 percent of the daily value for women which may help strengthen your bones. Brussels sprouts, along with other cruciferous vegetables, contain isothiocyanates, which  helps prevent cancer and also may reduce your risk of heart attack.

Super Easy Cobb Salad: Kid Friendly Recipe

Lately it has been such a struggle to figure out what to make the kids for dinner. I am always trying to come up with something new and different to please all three of my kids. I made this Easy Cobb Salad recipe last week, and it was quite the hit. I used chopped rotisserie chicken, but leftover grilled chicken, shrimp or steaks would also be a nice addition. Between my daughter’s dance practices three nights a week and my two boy’s basketball schedules, January and February has been nuts. This main dish salad is a great new recipe that all three of them agreed that they really liked. Prepare your own salad dressing using red wine vinegar, Dijon mustard and olive oil or use ranch or blue cheese. Have a great week ahead!

Parsnip-Potato Chowder

It’s the perfect time of year for soups, and why not try something a little different such as this Parsnip-Potato Chowder? When I taught a cooking class recently, very few people in the class had ever cooked or tried parsnips.  Parsnips are root vegetables, and they are related to the carrot family. Parsnips resemble carrots but are paler in color and have a slightly sweeter taste. Parsnips provide an excellent source of vitamin C, folic acid, B vitamins and fiber. Combine parsnips and potatoes with a touch of fresh dill, milk and vegetable broth to create a comforting and flavorful chowder. This soup tastes so rich without using any cream, and my kids even enjoyed it. For added flavor, sprinkle with crumbled bacon and fresh chopped dill.

Breakfast and brunch recipes are some of my favorites, and I love celebrating the holidays with my family with a great brunch menu. I’ve had so many emails and questions for Christmas brunch recipes, so I thought I would suggest one of my favorites. This Savory Bread Pudding with Bacon, Spinach and Sun-Dried Tomatoes makes a hearty breakfast or brunch main course, but it’s also great to serve for a weeknight or Sunday night dinner. This recipe is so easy and can be made ahead the night before. Then, all you have to do on Christmas morning is bake it in the oven. Enjoy this recipe anytime of the year since it’s also perfect for showers or any morning celebrations.

Recipe Testing and Judging: Cheddar Waffles with Applewood Bacon Butter

Okay, so no recipe today. Sorry! I am on a busy, tight work deadline recipe testing and judging for Cheesechampionsonline.com recipe contest for Safeway Cheese USA. The winner receives a “5-Day/5-Night Culinary Boot Camp” at The Culinary Institute. It’s an awesome project, shopping, recipe testing, evaluating and photographing some incredible entries that are as creative as delicious. I made these Cheddar Waffles with Applewood Bacon Butter this morning. Yesterday it was Apple Pepperjack Cornbread with Spicy Maple Glaze (yum!). Tonight it’s Crispy Fig & Prosciutto Pizza with Feta and Walnuts. I will let you know the winning recipe when I’m done.
