My mom used to take me to our local bakery when I was little, and eclairs were always my top dessert pick. Last night, my sister Julie, invited my daughter and I (along with my niece and several other friends) to learn how to make homemade eclairs. Her dear friend, Orli, a French baking expert, taught us how to make these Easy Eclairs Recipe from scratch. The recipe instructions may appear to be a long process, but they truly are easy! We are already in our first week of summer. It’s been great so far! I have been letting my kids help plan lunches and dinners. They also have been assisting me in the kitchen. Yesterday, we came up with this Cantaloupe Berry Salad (which was gone by last night). Use fresh cantaloupe, your favorite berries and a hint of lime juice and fresh mint. With back to school in full swing, I try to come up with new ideas for school lunches for my kids. These Quinoa Tabbouleh Wraps are great for the kids as well as for those of us who take their lunch to work (or work from home). Place the tabbouleh in an airtight container and bring your tortillas separately. This recipe is also gluten free if you use gluten free tortilla wraps. One more great thing. This recipe can be halved or if you have leftovers, this is a great, healthy salad to have on hand.
