Grilled Ratatouille Salad

Ratatouille is a French side dish located with Mediterranean vegetables. I decided to turn this healthy side into a salad with grilled vegetables and quinoa with this Grilled Ratatouille Salad recipe. This gluten-free and vegan recipe is perfect for a weeknight summer dinner or weekend lunch. I am actually serving this alongside grilled steaks this Memorial Day weekend. It’s three of my favorite things: healthy, flavorful and beautiful!

Summer is in full swing, and so many friends go to the lake or beach for the weekends. Recently, I have had so many requests for summer appetizers. This Salmon Salad Crostini is one of my newest favorites. Salmon is so healthy for you, and I have been craving it a lot lately. Chicken Couscous Salad

If you’re looking for a light, healthy and delicious salad, this Chicken Couscous Salad is the answer. Start with a rotisserie or leftover grilled chicken and combine with cooked couscous, cherry tomatoes, basil and either sherry or balsamic vinegar. Top it off with goat cheese or even feta, and you have a super wholesome main dish salad. I loved serving this over arugula leaves, but my kids just ate it straight out of this bowl. This makes a great lunch recipe or easy dinnertime entree.
