So Simple, So Summery, So Good: Watermelon-Tomato and Arugula Salad

This Watermelon-Tomato, Arugula Salad is a true taste of summer. This salad was inspired by a similar salad I had at George’s Restaurant in Alys Beach, Florida, one of my favorite places. The fresh combination of peppery arugula topped with sweet watermelon, mild yellow tomatoes and flavorful goat cheese mesh together perfectly. You don’t even need to use olive oil because it’s so healthy and low in fat. I drizzled mine with balsamic vinegar and fresh pepper, and that’s all I needed. Feel free to add grilled shrimp or grilled chicken to make this a main-dish salad as well. This is definitely my new favorite summer salad.

Memorial Day Break: Seashells on the Seashore

Forgive me. I have been out of touch on vacation and will get back to work as soon as I can with some new recipes and ideas. Things have been so busy, and it’s great to get a breather. I’m so happy that the beaches in Northwest Florida have stayed clear, and they are clearer than ever. My 9-year-old sorted his shells that he found today on a white towel. Honestly, I don’t ever remember the ocean here this clear, and my kids ever finding seashells with such ease.

Kid’s “Healthy Baking” Cooking Class at “Studio B” in Alys Beach

Over spring break (I can’t believe it has been a month), I had the ultimate pleasure and honor to teach my “Healthy Baking for Kid’s Cooking Class” at Studio B in Alys Beach. It was such a wonderful experience in an incredible venue, Studio B, located at the most beautiful beach in the country, Alys Beach. We had originally planned for 15 kids, but when 24 arrived, we didn’t turn them away. We made all types of wonderful healthy baked (and no bake) treats. I will feature some on the blog this coming week. Below, is a shot of some of my hometown Birmingham friend’s children who attended and some other shots taken from the class by the talented, Colleen Duffley, owner of Studio B.

Sorry I have been so out of touch. I have been preparing for the “Kids Healthy Baking” Cooking class at Studio B in Alys Beach, Florida all last week. The class was yesterday, and we had 24 kids-huge success! Back to the grind now, but not yet. Since I had the best margarita ever today with wonderful company at Caliza Pool in Alys Beach, I thought I would share a recipe for easy Empanadas that are low-fat (85 calories and 1.5 grams of fat per serving), easy and delicious! Studio B and Kid’s Culinary Camp This Summer in Alys Beach, Florida

Things have been so busy lately, and I am so excited about this summer! My kids are out of school, and they are so happy about that. Plus, I get the wonderful opportunity to teach kid’s culinary camps in the incredible location at Alys Beach Florida at Studio B. Colleen Duffley, a photographer of 25 years, had a “plan B” to create a studio that brings the best creative talent in food, photography, fashion, art, design, beauty, music and literature. There will be seminars, classes and inspirational lectures by some of the world’s most creative people.
