Mango Smoothie Recipe with Greek Yogurt: Kid Friendly

Lately, I have been making a ton of  smoothie recipes for my kids as the weather is changing, and we are trying not to get sick. This Mango Smoothie made with frozen Greek Yogurt is my newest favorite. I am so excited to find Adonia frozen Greek yogurt by Ciao Bella. We added frozen mango chunks by Dole (which are a great healthy snack), and I combined them with the Mango Frozen Yogurt and almond milk to create an incredibly fabulous refreshing smoothie. A 1/2 cup of the frozen Mango Yogurt contains 9 grams of protein, 24 grams of carbohydrates, 0 grams of fat and 130 grams calories. You can feel great about eating it as a dessert or afternoon snack. Blueberry Muffins with Greek Yogurt

When my daughter, Leigh, was bored the other day, I said, “Let’s make some muffins”. We had an abundance of blueberries on hand and came up with this healthier version of Blueberry Muffins with Greek Yogurt. Leigh is 13 years old, and she made this entire recipe on her own. I photographed this picture, but I told her that she just may have a summer internship. Anyway, this is the first of several of her creations coming soon that she made under my (very little) direction. They do taste as good as they look. We started with a dozen, and the next morning there were only 3 left 🙂

Blueberry Pancakes for Mother’s Day

What a week… I can’t believe that a week ago I buried my mom, and tomorrow it’s Mother’s day. It’s been such a rough week, but I have so many of you to thank for the sweet messages, notes, emails, calls, flowers, comments, lunches, etc. I am trying to pick myself up every day and move forward, and this blog is one great way to push me to do that. I thought I would share a super simple recipe for Blueberry Pancakes for Mother’s Day or any day since my mom always loved Mother’s Day brunches and who doesn’t love pancakes and blueberries?

Passover Granola Recipe

When my friend, Amy, told me about her Passover Granola recipe, I was very intrigued. I had never heard of granola for Passover before, and I thought, “what a novel idea.” She sent the recipe to me, and I tweaked a few things, cutting down the oil and butter and adding the dried fruit bits and pecans. I was so thrilled by the results because it is truly hard to find Passover snacks and dessert ideas. Serve this Passover Granola on its own, sprinkled on top of nonfat Greek yogurt or topped with almond milk.

Start the New Year Right: Green Smoothie Recipe

One of my New Year’s resolutions is to drink more Green Smoothies.  I am having so much fun with my Blendtec blender, and I loved this recipe for Green Smoothie. Breakfast Almond and Raspberry Quinoa

I’m a huge fan of quinoa, and one of my favorite ways to enjoy it, is for breakfast. Quinoa (pronounced Keen-wah) is one of the “it” or “super” grains right now, and it’s one of the best plant sources of protein with more high quality protein than any other grain. It’s loaded with protein, fiber and, best of all, is gluten-free. It is light, tasty and easy to digest, with a slightly nutty flavor. This recipe for Breakfast Almond and Raspberry Quinoa is fabulous. I had all 3 of my kids try it too, and they loved it. I love the combination of using almond milk, almonds and raspberries, but feel free to use any of your favorite fruits and toppings. Enjoy!
