It’s only 3 weeks until the Super Bowl, and I am already getting emails, direct Facebook, Twitter, Instagram messages and texts for recipe ideas. This Steak Nacho Recipe should be on your list for sure! I made this last week for my kids and husband, and they LOVED it! It’s really easy, fun to make and so flavorful. I will be making several versions of these nachos with ribeye steaks in one, grilled chicken in another, and a third with just black beans (for my vegetarian friends). Also, if you’re looking for a great grilled steak rub, try the spices listed above because the steaks by themselves are incredibly tasty too. I have been working on a ton of recipe testing lately (all healthy) for a super exciting new project! My kids have said they have never seen so much great, healthy food from me. HAHA, I guess I’ll take that as a “new” compliment! The other day, I had so many overripe bananas, that I made their favorite healthy quick breads: No Mixer Banana Bread recipe. Yes, with nonfat plan Greek yogurt and this time with fanned sliced bananas over the top. I don’t think it even lasted a full day, but it was wonderful. My son said, “There really isn’t anything better but this banana bread and a glass of milk.” Enjoy this No Mixer Banana Bread anytime of the year for breakfast, a mid morning snack or as a dessert, of course. No mixer is needed so cleanup is a snap.

Cantaloupe Berry Salad

We are already in our first week of summer. It’s been great so far! I have been letting my kids help plan lunches and dinners. They also have been assisting me in the kitchen. Yesterday, we came up with this Cantaloupe Berry Salad (which was gone by last night). Use fresh cantaloupe, your favorite berries and a hint of lime juice and fresh mint. It’s light, refreshing and makes a healthy dessert or after pool snack. Happy Wednesday!

 

Shrimp Alfredo Pizza

So Sorry I have been MIA since last week. I had Healthy Travel Magazine layouts due for our July issue, Fit & Well Birmingham copy due for our June issue and my latest and GREATEST new client for my media business! Not to mention, I have 3 kids, single mom, lower back disk issue, you get the drill…. Forgiven yet? I did get the amazing opportunity to go to Sedona to experience the amazing Lauberge De Sedona this weekend (typing on my flight). I slept 11 hours the first night and 12 hours the next. The spa was AMAZING!!  I’ll tell you more in in the Sept issue of Healthy Travel magazine. Now..to the SHRIMP ALFREDO PIZZA recipe! It is AWESOME and SO easy! My 3 teens devoured it! Friday Thoughts

After a really rough week (with some exciting things happening and bad news too), I am thrilled for opportunities such as this one in the photo above. I love travel, and I thank my lucky stars every day for the gift of travel. My mom used to tell me (when she was still alive), that “you must travel once a month”. She traveled the world with my dad. I definitely think she passed down the travel bug. Mom, you would be very proud (I miss you)! Have a great weekend everyone!

 

Pizza Bites

My kids come home starving after school. Can you relate? We make smoothies, sandwiches, bagels, dips and everything under the sun. Last week, we put this fun idea together: Pizza Bites. Use water crackers or your favorite crackers, pizza or marinara sauce, shredded cheese and turkey pepperoni. They LOVED this! We have now made them several times with fresh basil, mushrooms, black olives and spinach. Try it for your kids (or yourself). This would also be a great March Madness appetizer. 🙂

Vegetarian Quinoa Recipe

My daughter, Leigh, had to make a Peruvian Quinoa recipe for her advanced Spanish 2 class, which gave her and I the chance to come up with a new quinoa recipe. We experimented with many recipes, but we loved this Vegetarian Quinoa. Luckily, for me, my three kids love quinoa, and it’s a fabulous ingredient because it’s gluten free, rich in protein, contains all 9 of the essential amino acids and so much more. Quinoa is high in iron which helps our red blood cells stay healthy, high in lysene, essential for our tissues growth and repair. This superfood is also high in Riboflavin (B2) which is super important for our brain health and improves our energy and metabolism. It also has twice as much fiber as other grains. Need I say more? Enjoy this for lunch as a side dish or afternoon snack. I spooned it over fresh arugula with some crumbled feta cheese, and it was a great, healthy lunch. Here’s to a great and healthy week ahead!

I am always looking for kitchen shortcuts, quick cooking ideas and any helpful tips to make getting dinner on the table easier.
